The Beef Joint

  • 1.5 kg (3.3 lbs) Beef Joint: Prime cuts like Topside , Sirloin Joint , Ribeye Joint (Prime Rib) , or Beef Tenderloin / Chateaubriand work best. Ensure it has a nice cap of fat for self-basting.

Herb & Garlic Rub

  • Olive Oil or Avocado Oil (3 tbsp): High smoke-point oil to bind spices and promote browning.
  • Fresh Garlic (5 cloves, minced): Infuses deep savory aroma.
  • Fresh Rosemary (2 tbsp, finely chopped): Adds piney, earthy notes.
  • Fresh Thyme (2 tbsp, finely chopped): Complements the beef flavor without overpowering.
  • Coarse Sea Salt or Kosher Salt (1.5 tbsp): Essential for building a savory crust and tenderizing meat.

Aromatics for Roasting Pan

Instructions

  1. Remove the beef joint from the refrigerator at least 1 hour prior to cooking . Cold meat straight from the fridge will cook unevenly, leaving the outer edges overcooked while the center remains underdone. Pat the meat thoroughly dry with paper towels.
  2. Preheat your oven to 430°F (220°C / Gas Mark 7) . Scatter the thick onion wedges and halved carrots across the bottom of your roasting pan. Pour in 1 cup of beef stock. Place a metal roasting rack directly on top of the vegetables.
  3. In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, coarse sea salt, and black pepper to form a thick paste. Rub this mixture evenly over every side of the beef joint, ensuring the fat cap is generously coated.
  4. Place the beef joint on the rack fat-side up. Bake uncovered at 430°F (220°C) for exactly 15 minutes. This intense heat blast caramelizes the fat cap, activates the Maillard reaction, and seals in internal moisture.
  5. Without opening the oven door, reduce the oven temperature down to 320°F (160°C / Gas Mark 3) . Continue roasting for 35 to 45 minutes for a 1.5 kg joint. Insert a digital meat thermometer into the thickest part of the meat (avoiding fat deposits). Remove the roast when it reaches 125°F to 130°F (52°C to 54°C) for medium-rare.
  6. Transfer the roast beef joint to a warm board, cover loosely with aluminum foil (do not wrap tightly, or the crust will soften), and let it rest for 20 to 25 minutes. During resting, carryover cooking will raise the core temperature to a perfect 135°F (57°C) . Carve into thin slices across the grain for maximum tenderness.
