Ingredients

Main Components

  • Hot Dogs: 4–5 standard hot dogs (beef, turkey, or plant-based), cut into 1/2-inch coins (you need 24 total slices).
  • Cornmeal: 1/2 cup yellow cornmeal.
  • All-Purpose Flour: 1/2 cup.
  • Granulated Sugar: 2 tablespoons (adjust for sweetness preference).
  • Baking Powder: 1 teaspoon.
  • Baking Soda: 1/4 teaspoon.

  • Buttermilk: 1/2 cup (or whole milk mixed with 1/2 tsp white vinegar).
  • Egg: 1 large egg, room temperature.

Step 1: Prep the Hot Dogs & Equipment

  1. Pat dry: Remove hot dogs from packaging and pat them completely dry with paper towels. Excess moisture on the surface will prevent the batter from sticking properly.
  2. Slice: Cut each hot dog into bite-sized coins, roughly 1/2-inch thick.
  3. Preheat: For Air Fryer: Preheat air fryer to 375°F (190°C) for 3 minutes.
  4. For Oven: Preheat oven to 375°F (190°C) . Generously grease a 24-cup mini muffin tin with non-stick spray.

Step 2: Mix the Cornbread Batter

  1. In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate measuring cup, whisk the buttermilk, egg, melted butter, and honey until smooth.
  3. Pour the liquid mixture into the dry ingredients. Stir with a spatula just until combined— do not overmix , or the muffins will turn out dense instead of tender.

Step 3: Assemble the Muffins

  1. Spoon roughly 1 tablespoon of batter into each greased muffin cavity (filling each about 2/3 full).
