- Garlic (3 cloves): Minced.
- Chicken Broth (2 cups) & Heavy Cream (1 cup): The cooking liquids.
- Italian Seasoning (1 tsp) & Paprika (1/2 tsp): For flavor.
- Grated Parmesan Cheese (1/2 cup): Added at the end.
- Olive Oil, Salt, and Pepper: For cooking the chicken.
Step-by-Step Instructions
- Sear the Chicken: Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the chicken pieces with salt, pepper, and paprika. Cook for 5-6 minutes until golden-brown, then remove and set aside.
- Sauté Aromatics: Add the minced garlic and sun-dried tomatoes to the same pot. Sauté for 1 minute until fragrant.
- Add Liquids & Pasta: Pour in the chicken broth, heavy cream, Italian seasoning, and pasta. Bring the mixture to a boil, then reduce heat to medium-low, cover, and let simmer for 10-12 minutes, stirring occasionally so the pasta doesn’t stick.
- Stir in Chicken & Veggies: Once the pasta is al dente and the liquid has thickened, return the chicken to the pot and add the baby spinach. Stir until the spinach is wilted.
- Add Parmesan: Remove from heat and stir in the Parmesan cheese. Let it sit for 2 minutes to thicken before serving.
