For the Chicken

  • 3 lb (1.4 kg) bone-in chicken pieces
  • 1 cup buttermilk
  • 2 tablespoons mayonnaise

  • 1 cup all-purpose flour
  • ½ cup breadcrumbs
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper, optional

For Baking

  • 3 tablespoons melted butter
  • 2 tablespoons olive oil
  • ½ teaspoon paprika for finishing

Instructions

1. Prepare the Chicken

  1. Pat the chicken pieces dry with paper towels. Removing excess moisture helps the coating stick properly and encourages better browning.
  2. Place the chicken in a large bowl.
  3. Add the buttermilk, mayonnaise, Dijon mustard, lemon juice, garlic, salt, and black pepper. Mix until every piece is well coated.
  4. Cover and refrigerate for at least 1 hour .

  8. Most importantly, check the thickest part of the chicken with a food thermometer. Chicken should reach an internal temperature of 165°F (74°C) .

6. Rest Before Serving

  1. Remove the chicken from the oven and allow it to rest for 5–10 minutes .
  2. This gives the juices time to redistribute throughout the meat.
  3. Finish with fresh parsley if desired.
