For the Cake

1. Prepare the Oven and Pan
- Preheat your oven to 350°F (175°C) . Grease a 9 × 13-inch baking pan thoroughly with butter or nonstick cooking spray. You can also line the bottom with parchment paper for easier serving.
- Allowing the oven to fully preheat is important because the cake needs consistent heat from the moment it goes into the oven.
2. Mix the Dry Ingredients
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Mixing the dry ingredients first helps distribute the leavening agents evenly throughout the flour. This gives the cake a more consistent rise and prevents concentrated pockets of baking powder or baking soda.
3. Combine the Wet Ingredients
- In a large mixing bowl, whisk the eggs, vegetable oil, vanilla extract, crushed pineapple with its juice, and sour cream until smooth.
- The pineapple juice is important because it contributes moisture and flavor to the cake. Do not drain the crushed pineapple.
4. Make the Batter
- Gradually add the dry ingredients to the wet mixture. Stir gently until the flour is just incorporated.
- Do not overmix the batter. A few tiny streaks of flour are better than aggressively stirring the mixture. Overmixing can develop too much gluten and result in a tougher cake.
- Fold in 1 cup of shredded coconut until evenly distributed.
- The finished batter should be thick, moist, and easy to spread.
5. Bake the Cake
- Pour the batter into the prepared baking pan and spread it evenly with a spatula.
- Place the pan in the preheated oven and bake for approximately 30–35 minutes .
- The cake is ready when the top is lightly golden and a toothpick inserted into the center comes out mostly clean, with a few moist crumbs attached.
- Baking intensity: Moderate heat.
- Avoid overbaking because pineapple cakes can become dry if left in the oven too long.
- Remove the cake from the oven and place it on a wire rack. Let it cool completely before adding the topping.
6. Prepare the Creamy Coconut Topping
- While the cake cools, prepare the topping.
- Place softened cream cheese and powdered sugar in a large bowl. Beat until smooth and creamy. Add vanilla extract and mix again.
- In a separate bowl, whip the cold heavy cream until stiff peaks form. Be careful not to overbeat it.
- Gently fold the whipped cream into the cream cheese mixture. Fold in ½ cup shredded coconut .
- The result should be light, fluffy, creamy, and easy to spread.
7. Frost the Cake
- Once the cake has cooled completely, spread the cream cheese coconut topping evenly over the surface.
- Use an offset spatula or the back of a spoon to create a smooth finish.
- For an especially pretty presentation, sprinkle the top with additional shredded coconut. Toasted coconut can also be used for deeper flavor and a beautiful golden appearance.
- If desired, decorate with small pineapple pieces or maraschino cherries.
8. Chill Before Serving
- Cover the cake loosely and refrigerate for at least 2 hours before serving.
- This chilling period allows the topping to firm up and gives the flavors time to blend. The cake becomes especially soft and flavorful after resting in the refrigerator.
- For the best texture, serve the cake chilled.

Store leftover cake in an airtight container or cover the baking dish tightly with plastic wrap. Keep refrigerated for up to 4 days for the best quality. For the best flavor and texture, serve the cake cold or let individual slices sit at room temperature for approximately 5–10 minutes before eating. Freezing the fully frosted cake is not recommended because the cream topping may change texture after thawing. However, the unfrosted cake can be wrapped securely and frozen for up to about 2 months. Thaw it in the refrigerator before adding fresh topping.
