Pineapple Coconut Dream Cake

Ingredients

Cake Base:

  • 2 cups all-purpose flour
  • 1 cup sugar (or adjust to taste)
  • 1/2 cup shredded coconut
  • 1/2 cup crushed pineapple (drained slightly)
  • 3 eggs
  • 1/2 cup coconut milk
  • 1/3 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt

Pineapple Soaking Syrup:

  • 1/2 cup pineapple juice
  • 2 tbsp sugar (optional)

Coconut Cream Frosting:

  • 1 cup whipped cream or coconut cream
  • 1/2 cup cream cheese (optional for richness)
  • 2–3 tbsp powdered sugar
  • 1 tsp vanilla

Topping:

  • Toasted coconut flakes
  • Pineapple chunks

Instructions

Step 1: Prepare

  1. Preheat oven to 180°C (350°F)
  2. Grease or line a cake pan

Step 2: Mix Wet Ingredients

  1. Beat eggs and sugar until light and fluffy
  2. Add oil, coconut milk, vanilla, and pineapple
  3. Mix well

Step 3: Combine Dry Ingredients

  1. In another bowl, mix flour, baking powder, baking soda, salt, and shredded coconut

Step 4: Make Batter

  1. Gradually mix dry ingredients into wet mixture
  2. Stir until smooth

Step 5: Bake

  1. Pour batter into pan
  2. Bake for 30–35 minutes until golden

Step 6: Soak

  1. While warm, poke holes in cake
  2. Pour pineapple syrup over it

Step 7: Frost

  1. Once cooled, spread coconut cream frosting

Step 8: Decorate

  1. Add toasted coconut and pineapple on top
