Pineapple Dole Whip

A copycat version of the iconic Disney treat, this dairy-free and vegan dessert combines real pineapple and coconut cream for a creamy, refreshing, and tangy-sweet swirl that is easy to make at home.

Ingredients

  • 1 generous cup ice cubes
  • 2 cups frozen pineapple chunks (about 10 ounces), partially thawed
  • 1/4 cup pineapple juice
  • 2 tablespoons coconut cream
  • 1/2 cup nondairy milk (oat, soy, or almond)
  • 3 tablespoons agave syrup
  • 1 tablespoon confectioners' sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Place the ice cubes into a blender and pulse a few times to crush them into a pebbly consistency.
  2. Add the nondairy milk, pineapple juice, agave syrup, coconut cream, confectioners' sugar, and vanilla extract to the crushed ice.
  3. Add the partially thawed frozen pineapple chunks on top of the liquids.
  4. Blend on high speed until the mixture is completely smooth and creamy. If the blender stalls, stop and use a spatula to tamp down the mixture, add another tablespoon of nondairy milk, and blend again.
  5. Taste the mixture and add a little more agave if you prefer it sweeter.
  6. If the mixture feels too soft, transfer it to a bowl or container and freeze for 15-20 minutes to firm up slightly.
  7. Fit a large piping bag with a large star tip (or use a zip-top bag with a corner snipped off).
  8. Transfer the blended mixture into the piping bag and freeze for 20-30 minutes to firm up for piping.
  9. Remove the bag from the freezer and pipe the mixture in a circular motion, layering upwards to create a tall, swirled pile.
  10. Serve immediately.

Notes

For a Dole Whip Float, pour extra pineapple juice around the piped swirl and garnish with a fresh pineapple wedge. If coconut cream is unavailable, substitute the cream and nondairy milk with 1/2 cup full-fat canned coconut milk. Agave can be replaced with honey (non-vegan). Store in the freezer for up to 3 months; let sit at room temperature for 20-30 minutes before serving.
