Ingredients

For the Wonton Filling

  • 300 g ground pork (or ground chicken)
  • 150 g peeled and finely chopped shrimp (optional)
  • 2 green onions, finely sliced
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon oyster sauce
  • ½ teaspoon white pepper
  • 1 teaspoon cornstarch
  • 1 tablespoon finely chopped cilantro (optional)

For the Wontons

  • 40 wonton wrappers
  • Small bowl of water for sealing

For the Soup Broth

  • 8 cups chicken broth
  • 2 cups water
  • 2 cloves garlic, smashed
  • 1 tablespoon sliced fresh ginger
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • ½ teaspoon white pepper
  • 2 green onions, sliced

Optional Vegetables

  • Baby bok choy
  • Spinach
  • Napa cabbage
  • Mushrooms
  • Snow peas
  • Carrots, julienned

Garnishes

  • Chopped green onions
  • Fresh cilantro
  • Chili oil
  • Toasted sesame seeds

Instructions

Step 1: Prepare the Filling

  1. In a bowl, combine the ground pork, chopped shrimp, green onions, garlic, ginger, soy sauce, sesame oil, oyster sauce, white pepper, cornstarch, and cilantro.
  2. Mix until well combined but do not overwork the mixture.

Step 2: Fold the Wontons

  1. Lay a wonton wrapper on a clean surface.
  2. Place about 1 teaspoon of filling in the center.
  3. Moisten the edges with water.
  4. Fold into a triangle and press out any air.
  5. Bring the two side corners together and press firmly to seal.
  6. Repeat until all the filling is used.

Step 3: Prepare the Broth

  1. In a large pot, combine the chicken broth, water, garlic, ginger, soy sauce, sesame oil, rice vinegar, and white pepper.
  2. Bring to a gentle simmer for 10 minutes.
  3. Remove the garlic and ginger if desired.

Step 4: Cook the Wontons

  1. Bring the broth to a gentle boil.
  2. Carefully add the wontons.
  3. Cook for 4–6 minutes, or until they float and the filling is fully cooked.

Step 5: Add Vegetables

  1. Add the bok choy, spinach, mushrooms, or other vegetables.
  2. Cook for another 2–3 minutes until tender.

Step 6: Serve

  1. Ladle the broth, wontons, and vegetables into bowls. Garnish with green onions, cilantro, sesame seeds, and a drizzle of chili oil if desired. Cooking classes online

Notes

Refrigerate leftover soup for up to 3 days . Store cooked wontons separately from the broth if possible to prevent them from becoming too soft. Freeze uncooked wontons for up to 3 months . Reheat gently over medium heat without boiling vigorously.
