Instructions
Step 1: Prep and Season the Short Ribs
- Clean and Dry: Pat the beef short ribs thoroughly dry with paper towels. Removing moisture is essential for achieving a deep, crispy brown crust during the searing step.
- Trim Excess Fat: Trim off any loose membrane or overly thick layer of fat from the top of the ribs, leaving roughly a 1/4-inch fat cap for flavor and moisture.
- Mix the Dry Rub: In a small bowl, combine the dark brown sugar, smoked paprika, garlic powder, onion powder, chili powder, ground cumin, kosher salt, black pepper, and cayenne pepper.
- Apply the Seasoning: Rub the spice mixture evenly over all sides of each short rib, pressing firmly so the dry rub adheres well.
Step 2: Sear the Beef (High Intensity / High Heat)
- Heat the Skillet: Place a heavy skillet over medium-high heat and add the 2 tablespoons of avocado oil. Allow the oil to shimmer until it is very hot but not smoking.
- Sear in Batches: Place short ribs into the skillet in small batches (do not overcrowd the pan). Sear each side for approximately 2 to 3 minutes until a rich, dark golden-brown crust forms on all sides.
- Transfer to Slow Cooker: Use tongs to transfer the seared ribs directly into the base of your slow cooker, arranging them bone-side down in a single or semi-overlapping layer.
Step 3: Build the BBQ Sauce Mixture
- Sauté the Onions: Reduce the skillet heat to medium. Add the diced yellow onion to the residual drippings and sauté for 3 minutes until softened. Add minced garlic and cook for another 60 seconds until fragrant.
- Whisk Sauce Ingredients: In a medium bowl, whisk together the ketchup, apple cider vinegar, maple syrup (or molasses), Worcestershire sauce, yellow mustard, tomato paste, beef broth, and liquid smoke.
- Combine: Pour the sautéed onion and garlic into the sauce, stir well, and pour the entire barbecue mixture evenly over the short ribs in the slow cooker.
Step 4: Low & Slow Braise
- Cover and Cook: Secure the lid tightly onto the slow cooker.
- Select Temperature: LOW Setting (Recommended): Cook for 7 to 8 hours . This slow extraction breaks down connective tissue into rich gelatin, yielding the most tender results.
- HIGH Setting: Cook for 4 to 5 hours .
- Check Doneness: The beef is fully cooked and perfectly tender when a fork slides in and out of the meat effortlessly, and the meat naturally pulls away from the bone.
Step 5: Sauce Reduction & Finishing Glaze
- Remove Beef: Carefully lift the cooked short ribs out of the slow cooker and transfer them to a baking sheet lined with foil or a serving platter. Cover loosely with aluminum foil to keep warm.
- Strain & Skim Grease: Skim the excess layer of render beef fat from the remaining cooking liquid using a fat separator or spoon.
- Reduce Sauce: Pour the remaining liquid into a small saucepan over medium-high heat. Simmer for 8 to 10 minutes , stirring frequently, until it reduces by half and thickens into a glossy, dark, brushable BBQ sauce.
- Glaze and Caramelize (Optional Step for Maximum Flavor): Preheat your oven broiler to HIGH. Brush the thickened BBQ sauce generously over all sides of the ribs. Place under the broiler for 3 to 4 minutes until the sauce bubbles and slightly caramelizes.
