Ingredients

For the Chicken:

  • 4 large boneless, skinless chicken breasts (approximately 1.5 to 2 pounds), trimmed of excess fat
  • Salt and freshly ground black pepper , to taste
  • 1 tablespoon olive oil (optional, for searing, though searing is entirely skippable for a true dump-and-go meal)

For the Cranberry Glaze:

  • 1 can (14 ounces) whole berry cranberry sauce (provides the sweet, tart base and signature texture)
  • ⅓ cup honey or pure maple syrup (to balance the natural tartness of the cranberries)
  • ¼ cup orange juice (freshly squeezed adds a bright, citrusy brightness that cuts through the rich sweetness)
  • 2 tablespoons balsamic vinegar (adds depth, complexity, and a subtle tang)
  • 1 tablespoon Dijon mustard (acts as an emulsifier and provides a subtle, savory background kick)
  • 2 cloves garlic , minced
  • 1 teaspoon fresh ginger , grated (optional, but highly recommended for a warm, aromatic spice note)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

For Garnish & Thickening (Optional):

  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water (cornstarch slurry, used only if you prefer a thicker, stickier glaze at the end)
  • Fresh rosemary sprigs or chopped fresh parsley
  • Orange zest for garnish

Instructions

Step 1: Prepare the Slow Cooker

  1. Lightly coat the interior of your slow cooker insert with non-stick cooking spray or a light wipe of olive oil to prevent any sticky glaze from clinging to the ceramic walls during the cooking process.

Step 2: Season the Chicken

  1. Pat the boneless, skinless chicken breasts completely dry with paper towels. Season both sides generously with salt and freshly ground black pepper. Place the seasoned chicken breasts in a single layer at the bottom of the slow cooker.
  2. (Optional Chef’s Tip: If you have an extra 5 minutes, sear the chicken breasts in a hot skillet with 1 tablespoon of olive oil for 2 minutes per side before placing them in the slow cooker. This locks in juices and adds a golden-brown exterior, but you can safely skip this step if you are in a rush.)

Step 3: Mix the Glaze

  1. In a medium mixing bowl, whisk together the whole berry cranberry sauce, honey (or maple syrup), orange juice, balsamic vinegar, Dijon mustard, minced garlic, grated ginger, ground cinnamon, and ground nutmeg. Ensure the mixture is well combined and uniform.

Step 4: Pour and Coat

  1. Pour the cranberry glaze mixture evenly over the chicken breasts in the slow cooker, making sure each breast is thoroughly coated and smothered in the sauce.

Step 5: Cook Low and Slow

  1. Cover the slow cooker with its lid. Cook on LOW heat for 4 to 6 hours , or on HIGH heat for 2 to 3 hours . Note: Chicken breasts are very lean and can easily dry out if overcooked. Check the internal temperature around the 3-hour mark on LOW. As soon as the chicken reaches an internal temperature of 165°F (74°C), it is done.

Step 6: Thicken the Sauce (Optional)

  1. If you prefer a thicker, more syrupy glaze that clings heavily to the back of a spoon:
  2. Carefully remove the cooked chicken breasts from the slow cooker and transfer them to a clean cutting board or serving platter, tenting them loosely with aluminum foil to keep them warm.
  3. Pour the remaining liquid sauce from the slow cooker into a small saucepan over medium heat.
  4. Whisk in the cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon cold water).
  5. Simmer the sauce for 3 to 5 minutes, stirring frequently, until it bubbles and thickens into a glossy glaze.

Step 7: Garnish and Serve

  1. Spoon the rich cranberry glaze generously over the warm chicken breasts. Garnish with fresh rosemary sprigs, chopped parsley, or a dusting of fresh orange zest for a vibrant pop of color and aroma. Serve immediately alongside your favorite sides.
