Ingredients
- 4 bone-in or boneless pork chops (about 1 inch thick)
- ½ cup brown sugar, packed
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- 1 tablespoon olive oil
- ¼ cup chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons cold water (optional)

- Pat the pork chops dry using paper towels. Season both sides of the pork chops with salt, black pepper, paprika, and onion powder.
- In a small bowl, combine the brown sugar, minced garlic, thyme, Worcestershire sauce, and olive oil. Mix until a thick paste forms.
- Lightly grease the inside of the slow cooker. Place the pork chops in a single layer on the bottom. Spread the garlic brown sugar mixture evenly over the tops of the pork chops. Pour the chicken broth around the edges of the slow cooker, avoiding pouring directly over the sugar mixture.
- Cover the slow cooker with the lid. Cook on LOW for 4 to 6 hours or HIGH for 2 to 3 hours. The pork chops are done when they reach an internal temperature of 145°F (63°C) and are tender.
- Optional: If you’d like a thicker sauce, carefully remove the pork chops and set them aside. In a small bowl, whisk together the cornstarch and cold water until smooth. Stir the slurry into the liquid remaining in the slow cooker. Cover and cook on HIGH for 10 to 15 minutes until the sauce thickens. Return the pork chops to the slow cooker and spoon the sauce over the top.
- Transfer the pork chops to serving plates. Spoon the garlic brown sugar sauce generously over each chop. Serve hot.

Bone-in pork chops generally stay juicier during slow cooking. Fresh minced garlic provides the best flavor. Dark brown sugar produces a deeper molasses flavor. Avoid lifting the lid to prevent heat loss. Store leftovers in an airtight container for up to 4 days in the refrigerator or up to 3 months in the freezer.
