Equipment
- Large mixing bowl: Provides room to mix and knead the dough comfortably.
- Measuring cups or kitchen scale: Helps keep the flour-to-liquid ratio consistent.

- Large skillet or cast-iron pan: Provides the direct heat needed for golden, pan-cooked flatbreads.
- Spatula or tongs: Helps flip the flatbreads safely.
- Clean kitchen towel: Keeps the cooked bread warm and soft while you prepare the remaining pieces.

Instructions
Step 1: Combine the Dry Ingredients
- In a large mixing bowl, whisk together the flour, baking powder, salt, and optional sugar.
- Mixing the dry ingredients first helps distribute the baking powder evenly, giving the flatbreads a more consistent texture.
Step 2: Add the Water and Oil
- Pour in the olive oil and most of the warm water. Stir with a wooden spoon until a rough dough forms.
- Add the remaining water a little at a time if the mixture looks dry. The dough should feel soft and slightly tacky without being excessively sticky.
- If the dough is too wet to handle, sprinkle in a small amount of flour rather than adding a large quantity at once.
Step 3: Knead the Dough
- Transfer the dough to a lightly floured work surface. Knead for approximately 5–7 minutes until it becomes smoother and more elastic.
- Press the dough forward with the heel of your hand, fold it back, and repeat. The finished dough should be soft and pliable.
- Avoid adding too much extra flour during kneading, as this can make the flatbreads tough.
Step 4: Let the Dough Rest
- Shape the dough into a ball and place it back in the bowl. Cover with a clean towel or plate and rest for 20 minutes.
- This resting period allows the flour to absorb the water and relaxes the gluten, making the dough easier to roll out.
- For a softer result, keep the dough covered so its surface does not dry out.
Step 5: Divide the Dough
- Place the rested dough on a lightly floured surface and divide it into 8 equal portions.
- Roll each portion into a smooth ball. Keep the remaining dough balls covered while working with one piece at a time.
- For smaller flatbreads, divide the dough into 10 portions and reduce the cooking time slightly.
Step 6: Roll Out the Flatbreads
- Use a rolling pin to roll each dough ball into a circle approximately 6–8 inches (15–20 cm) wide and about ⅛ inch (3 mm) thick.
- Turn the dough occasionally while rolling to help maintain an even shape. Dust the work surface lightly with flour only when necessary.
- If the dough keeps shrinking, cover it and allow it to rest for another 5 minutes before rolling again.
Step 7: Heat the Skillet
- Place a large, dry skillet over medium-high heat and allow it to warm for 2–3 minutes.
- To test the temperature, place a small piece of dough in the pan. It should begin cooking and develop light golden spots without burning immediately.
- A properly heated skillet is essential for flatbreads that are golden outside while remaining soft inside.
Step 8: Cook the First Side
- Place one rolled flatbread into the hot skillet. Cook for approximately 45–90 seconds, or until small bubbles appear and the underside develops golden-brown spots.
- Avoid pressing down too firmly with a spatula because this can prevent the bread from puffing.
- If the bread browns too quickly, lower the heat slightly.
Step 9: Flip and Cook the Other Side
- Flip the flatbread using a spatula or tongs. Cook the second side for another 45–90 seconds, until lightly golden and cooked through.
- Some flatbreads may puff up in the center, while others remain relatively flat. Both results are normal.
- If the bread looks dry or stiff, the pan may be too hot or the cooking time may be too long.
Step 10: Brush with Butter
- Transfer the cooked flatbread to a plate and brush lightly with melted butter, if desired.
- For garlic flatbreads, mix the melted butter with finely minced garlic and chopped parsley. Brush the mixture over the bread while it is still warm.
- For a dairy-free option, use olive oil instead.
Step 11: Stack and Cover
- Place each finished flatbread on top of the previous one and cover the stack with a clean kitchen towel.
- Trapping some of the warmth helps the flatbreads stay soft and flexible while you cook the remaining portions.
- Repeat until all the dough has been cooked.
Step 12: Serve Warm
- Serve the flatbreads immediately with curry, grilled chicken, scrambled eggs, soups, hummus, or your favorite dip.
- You can also use them as wraps for vegetables, cheese, or cooked meat. For extra flavor, warm them briefly in the skillet just before serving.
