- 2 cups (240g) Self-Rising Flour
- 1 ½ cups (180g) Sharp Cheddar Cheese, shredded

- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- In a large mixing bowl, add the self-rising flour. If using optional garlic powder and pepper, whisk them into the flour now so they are evenly distributed.
- Add the shredded cheddar cheese to the flour. Toss the cheese with your fingers to coat it in the flour to prevent clumping.
- Pour the heavy cream over the flour and cheese mixture. Use a spatula or a wooden spoon to stir the mixture until it just comes together into a shaggy dough. Do not overmix.
- Lightly flour your hands. Scoop out a heaping tablespoon of dough (about the size of a golf ball) and roll it quickly into a ball. Place the dough ball onto the prepared baking sheet. Repeat with the remaining dough, spacing them about 2 inches apart.
- Brush the tops of the biscuits with a tiny bit of leftover heavy cream. Sprinkle the tops with a pinch of flaky sea salt.
- Bake in the preheated oven for 12 to 15 minutes. Rotate the baking sheet halfway through to ensure even baking. The biscuits are ready when they are puffed up and the tops are a deep, golden brown.
- Remove the baking sheet from the oven. Let the biscuits rest on the tray for 5 minutes. Transfer to a wire rack to cool slightly, or serve them warm straight from the tray.

Pre-shredded cheese has anti-caking agents that can affect the texture; freshly grated is best. Do not substitute heavy cream with milk or half-and-half; the fat content is essential for the texture. You can use a cookie scoop to drop the dough directly onto the baking sheet for a rustic look. Feel free to add 2 tablespoons of chopped fresh chives, a pinch of cayenne pepper, or ¼ cup of crispy, crumbled bacon to the dough.
