Instructions
- Wash the cucumber thoroughly under cool running water and pat dry.
- Slice the cucumber into very thin, even rounds using a sharp knife or mandoline slicer.
- Lay the cucumber slices on paper towels, sprinkle lightly with salt, and let sit for about ten minutes to draw out excess moisture.
- Pat the cucumber slices dry again with fresh paper towels.
- In a mixing bowl, combine the softened cream cheese and mayonnaise.
- Stir in the chopped dill, chives, and minced garlic.
- Season with salt and white pepper to taste and mix until smooth.
- Cover the spread and let it rest in the refrigerator for about ten minutes.
- Lay out the slices of bread on a clean work surface.
- Spread an even layer of the herbed cream cheese mixture onto one side of each slice.
- Arrange a single layer of cucumber slices over half of the prepared bread slices, slightly overlapping for full coverage.
- Top with the remaining bread slices, spread-side down, to form sandwiches.
- Trim the crusts from each assembled sandwich and cut into triangles, rectangles, or decorative shapes.
- Arrange the finished sandwiches on a tray, cover loosely with a damp paper towel and plastic wrap, and refrigerate for about fifteen minutes before serving.

Notes
Select firm, unblemished English or hothouse cucumbers for the best texture. Fresh herbs are recommended over dried for a brighter flavor. Taste the spread before assembling to adjust seasoning. These sandwiches are best enjoyed fresh and are not suitable for freezing.
