Instructions

Step 1: Soak the Livers (15 minutes, Low Intensity)

  1. Rinse the chicken livers under cold running water. Trim away any visible connective tissue, fat, and greenish spots (these can taste bitter). Place the cleaned livers in a bowl, pour the buttermilk over them, and add the hot sauce if using. Let soak at room temperature for 15 minutes — this mellows the mineral flavor and helps the breading adhere.

Step 2: Heat the Oil (5–7 minutes, Medium Intensity)

  1. While the livers soak, pour 4 cups of oil into a heavy Dutch oven or deep cast-iron skillet, filling it no more than halfway. Heat over medium-high heat until the oil reaches 350°F (175°C) . Use a thermometer for accuracy — too hot and the crust burns before the liver cooks through; too cool and the breading turns greasy.

Step 3: Prepare the Breading (3 minutes, Low Intensity)

  1. In a shallow dish, whisk together the flour, cornmeal, salt, black pepper, cayenne, garlic powder, onion powder, and smoked paprika until evenly combined.

Step 4: Dredge the Livers (5 minutes, Medium Intensity)

  1. Working in batches of 4–5, lift each liver from the buttermilk, letting excess drip off. Roll it in the flour mixture, pressing gently so the coating sticks. Shake off excess and set on a wire rack. Let the coated livers rest 5 minutes before frying — this helps the crust set and stay put.

Step 5: Fry the Livers (10–12 minutes total, High Intensity)

  1. Carefully lower the coated livers into the hot oil using tongs or a slotted spoon, keeping them in a single layer. Fry for 2½ to 3 minutes per side , turning once, until deeply golden brown and the internal temperature reaches 165°F (74°C) . Fry in batches of 4–6 to maintain oil temperature. Adjust heat as needed to keep the oil between 340–350°F (170–175°C) .

Step 6: Drain and Rest (2–3 minutes, Low Intensity)

  1. Transfer the fried livers to a wire rack set over a baking sheet (a rack keeps them crispier than paper towels). Sprinkle lightly with salt while hot. Rest 2–3 minutes before serving.

Step 7: Serve (Immediate, Low Intensity)

  1. Serve hot with lemon wedges, chopped parsley, and cream gravy or hot sauce on the side.
