Equipment

  • Heavy-duty rimmed baking sheet (half-sheet pan)
  • Heavy-duty aluminum foil (standard foil tears easily on rib bones)
  • Small saucepan (for reducing the glaze)
  • Pastry or silicone basting brush
  • Paper towels (essential for gripping the membrane)
  • Sharp chef’s knife or meat cleaver
  • Instant-read internal meat thermometer

Ingredients

The Meat & Base Rub

  • 2 racks (approx. 5 to 6 lbs / 2.3–2.7 kg) baby back pork ribs (or St. Louis cut spare ribs)
  • 2 tbsp yellow mustard or olive oil (acts as a binder; the mustard flavor cooks out completely)
  • 2 tbsp dark brown sugar (packed)
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1.5 tsp onion powder
  • 1.5 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1/2 tsp ground cayenne pepper (optional, for gentle back-end heat)

The Sticky Honey Garlic BBQ Glaze

  • 1 cup classic smoky BBQ sauce (Kansas City style or hickory-smoked)
  • 1/2 cup pure clover honey
  • 8 cloves fresh garlic, very finely minced or grated (approx. 2.5 tbsp)
  • 3 tbsp low-sodium soy sauce or tamari
  • 2 tbsp apple cider vinegar (cuts through the rich fats and sugars)
  • 1 tbsp unsalted butter
  • 1 tsp toasted sesame oil
  • 1/2 tsp crushed red chili flakes (optional)

Optional Garnish

  • 2 tbsp finely sliced green onions (scallions) or chives
  • 1 tsp toasted white sesame seeds

Instructions

Step 1: Prep & Membrane Removal

  1. Pat the rib racks completely dry on both sides using clean paper towels.
  2. Turn the ribs bone-side up. Locate the thin, silvery membrane (peritoneum) covering the bones. Slide a dull butter knife under the membrane along one of the center bones to loosen it.
  3. Grip the edge firmly using a paper towel for traction, then pull the membrane cleanly off in one smooth sheet. Discard it. Removing this membrane ensures the rub penetrates the meat and prevents the ribs from curling or remaining chewy.
  4. Trim away any excessive surface fat caps or dangling meat flaps to ensure even cooking.

Step 2: Apply Binder & Dry Rub

  1. In a small mixing bowl, whisk together the brown sugar, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper.
  2. Rub a thin, even coat of yellow mustard over both sides of the ribs.
  3. Generously sprinkle the dry rub mixture across the top, bottom, and edges of each rack. Gently massage the spices into the meat.
  4. Allow the ribs to sit at room temperature for 20 to 30 minutes while preheating the oven.

Step 3: Low-and-Slow Roast (Intensity: Low, 275°F / 135°C)

  1. Preheat your oven to 275°F (135°C) with the rack positioned in the center.
  2. Tear off four large sheets of heavy-duty aluminum foil. Lay two overlapping sheets down for each rack.
  3. Place each seasoned rack meat-side up in the center of the foil. Crimp the edges upward slightly, then fold and seal the foil tightly around the ribs to form an airtight steam packet. A tight seal traps natural juices and gently braises the meat fibers until tender.
  4. Transfer the wrapped packets to the rimmed baking sheet.
  5. Bake undisturbed for 2 hours to 2 hours and 30 minutes (2 hours for baby back ribs; 2.5 hours for thicker St. Louis cut ribs). The meat should retract roughly 1/4 to 1/2 inch from the tips of the rib bones.

Step 4: Simmer the Sticky Honey Garlic Glaze (Intensity: Medium-Low)

  1. While the ribs are baking, melt the butter in a small saucepan over medium heat .
  2. Add the minced garlic and sauté for 60 to 90 seconds until fragrant and golden, taking care not to scorch it.
  3. Pour in the BBQ sauce, honey, soy sauce, apple cider vinegar, sesame oil, and red pepper flakes. Whisk thoroughly to combine.
  4. Bring the sauce to a gentle simmer, then reduce heat to medium-low . Cook uncovered for 6 to 8 minutes, stirring frequently, until the sauce thickens into a glossy, rich syrup that clings to the back of a spoon. Remove from heat and divide the sauce into two bowls: 2/3 for basting, 1/3 reserved clean for table dipping.

Step 5: Baste and Caramelize (Intensity: High, 425°F / 220°C)

  1. Remove the baking sheet from the oven and carefully increase the oven temperature to 425°F (220°C) (or turn on the high broil function).
  2. Carefully unwrap the foil packets, watching out for escaping steam. Drain or spoon away excess rendered liquid from the pan.
  3. Place the ribs directly on the foil-lined baking sheet, meat-side up.
  4. Use a silicone pastry brush to generously coat the tops and sides of the ribs with the honey garlic BBQ glaze.
  5. Return the ribs to the hot oven for 5 to 7 minutes until the glaze bubbles.
  6. Brush on a second thick layer of glaze and bake for an additional 4 to 6 minutes until the edges take on a deep mahogany char and the honey-garlic sugars are sticky and caramelized.

Step 6: Rest, Garnish, and Carve

  1. Remove the ribs from the oven. Let them rest uncovered for 8 to 10 minutes so the juices redistribute throughout the meat fibers.
  2. Sprinkle the caramelized top with sliced scallions and toasted sesame seeds.
  3. Invert the rack meat-side down on a cutting board to clearly see the bone structure. Slice between the bones with a sharp chef’s knife into individual ribs or 2-bone portions. Serve warm with the reserved bowl of sauce.
