Equipment
- high-speed blender
- spatula
- large pitcher
- glasses
Ingredients
- 2 cups fresh strawberries, hulled and quartered
- 2 medium apples (such as Fuji or Gala), peeled, cored, and roughly chopped
- 1 cup apple juice (100% pure, no added sugar)
- 1/2 cup plain Greek yogurt (full-fat or low-fat)
- 1/4 cup heavy cream or full-fat coconut milk (for dairy-free)
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon vanilla extract
- 1 cup ice cubes, plus more for serving
- Fresh strawberry slices and apple chunks, for garnish
- Optional: 1/2 cup sparkling water or ginger ale, for a fizzy kick
Instructions
- Wash strawberries under cool running water, hull by removing green tops and white core, and quarter them.
- Wash apples, peel the skin, core to remove seeds and fibrous center, and roughly chop into 1-inch pieces.
- In a high-speed blender, combine prepared strawberries, chopped apples, apple juice, Greek yogurt, heavy cream (or coconut milk), honey or maple syrup, lemon juice, and vanilla extract.
- Add 1 cup of ice cubes to the blender.
- Secure the lid and blend on high speed until the mixture is completely smooth and creamy, which may take 1-2 minutes. Pause and scrape down sides if necessary.
- Taste the punch and adjust for sweetness if desired by adding more honey or maple syrup. If too thick, add a small splash of apple juice or water.
- Pour the punch into a large pitcher.
- If serving immediately, fill individual glasses with fresh ice and pour the punch over.
- Garnish each glass generously with fresh strawberry slices and small apple chunks.
- For an optional fizzy kick, top off each glass with about 1/4 cup of sparkling water or ginger ale just before serving and gently stir to combine.
- Serve immediately.
Notes
Best enjoyed fresh and cold. Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days. Stir well before serving as separation may occur. Do not freeze. For a dairy-free version, use dairy-free yogurt and full-fat coconut milk or creamy oat milk. For an adult version, add 1-2 ounces of white rum, vodka, or berry-flavored liqueur per serving.
