Tutti Frutti Juice is a colorful, sweet, fruity, and refreshing drink made using mixed fruits, fruit syrup, milk or soda, ice cream, jelly, basil seeds, and small chewy tutti frutti cubes. It is popular as a summer beverage and can be prepared in many rich and layered styles.

- 1 ripe banana
- 1 apple
- 1 mango
- 1 orange
- 1 cup pineapple chunks
- 1 cup papaya cubes
- 1 cup watermelon cubes
- 1 cup grapes
- 1 pomegranate
- 1 kiwi
- 6 strawberries
- 2 cups chilled milk
- 2 cups orange juice
- 1 cup pineapple juice
- 1 cup mango juice
- 1 cup chilled soda or sparkling water (optional)
- 4 tablespoons rose syrup
- 4 tablespoons strawberry syrup
- 3 tablespoons sugar or honey
- 1 cup colorful tutti frutti cubes
- 2 tablespoons soaked basil seeds
- 1 cup vanilla ice cream
- 1 cup mixed fruit jelly cubes
- 10 to 15 ice cubes
- chopped nuts (optional)
- whipped cream (optional)
- extra tutti frutti (for decoration)
- sliced fruits (for decoration)
- cherries (for decoration)
- mint leaves (for decoration)
Instructions
- Prepare Tutti Frutti: If using homemade, peel 1 raw papaya, remove seeds, and cut into tiny cubes. Boil in water for 3-4 minutes and drain. Prepare sugar syrup with 2 cups sugar and 1 cup water. Add papaya cubes and cook on low flame for 15 minutes. Divide into bowls, add food colors (red, green, yellow, orange), and leave overnight to absorb. Drain and dry slightly.
- Wash and Prepare Fruits: Wash all fruits with cold water. Peel and slice banana. Remove seeds and chop apple into cubes. Peel and cut mango flesh. Remove skin and seeds from orange. Remove hard center and chop pineapple. Peel and cube papaya. Remove seeds from watermelon. Slice grapes in halves if large. Remove pomegranate seeds. Peel and slice kiwi thinly. Remove tops and cut strawberries.
- Make Fresh Fruit Puree: In a blender, add banana, mango, pineapple, papaya, strawberries, orange juice, and mango juice. Blend until smooth. If too thick, add a little chilled milk or cold water and blend again until creamy.
- Prepare Basil Seeds: Soak 2 tablespoons of basil seeds in 1 cup of water for 15-20 minutes until they swell. Strain excess water.
- Prepare Serving Glasses: In tall transparent glasses, layer 1 tablespoon of rose syrup, fruit jelly cubes, soaked basil seeds, small fruit cubes, and colorful tutti frutti cubes.
- Pour Juice Mixture: Slowly pour the blended fruit mixture into each glass, leaving space on top. Add chilled milk, a little pineapple juice, and soda (if using). Mix gently with a long spoon.
- Add Ice Cream: Place 1 large scoop of vanilla ice cream on top of each glass.
- Final Decoration: Decorate with extra tutti frutti, chopped nuts, cherries, mint leaves, and fruit slices. Drizzle with extra strawberry or rose syrup if desired.
- Serve immediately while cold.
Notes
Always use chilled fruits for best taste. Do not overblend watermelon as it becomes watery. Add banana for creaminess. Use fresh fruits instead of canned whenever possible. Add sugar carefully because syrups are already sweet. Serve immediately after preparation. Keep ice cream frozen until serving time. Fruit puree can stay in the refrigerator for 1 day. Cut fruits should be covered properly. Do not freeze completed juice because texture changes. Approximate preparation time is 45 minutes (25 min cutting, 10 min blending, 10 min decoration). Serves 5 to 6 large glasses.
