A low-carb comfort food featuring crispy zucchini 'bread' crusts and a rich, gooey cheese center. This intermediate-level recipe requires careful flipping of delicate veggie crusts and steady, moderate pan heat to crisp the exterior without burning while melting the cheese inside.
Ingredients
- 2 medium-sized fresh zucchinis, washed and trimmed
- 1/2 teaspoon salt (for drawing moisture)
- 1 large pasture-raised egg
- 1/2 cup finely shredded mozzarella cheese or Parmesan cheese
- 1/4 cup almond flour or coconut flour
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano or Italian seasoning
- 1/4 teaspoon freshly ground black pepper
- 1 cup freshly shredded cheddar cheese, provolone, or Swiss cheese
- 2 tablespoons unsalted butter or ghee (divided)

Instructions
- Coarsely grate the zucchinis. Place in a colander, sprinkle with 1/2 teaspoon salt, toss gently, and let sit for 10 minutes to draw out moisture.
- Transfer the salted zucchini into a clean kitchen towel, cheesecloth, or nut milk bag. Gather corners tightly and squeeze out as much liquid as possible.
- In a medium mixing bowl, combine the squeezed zucchini, beaten egg, shredded mozzarella or Parmesan, almond flour, garlic powder, oregano, and black pepper. Stir until a thick, cohesive dough forms.
- Heat a large non-stick or cast-iron skillet over medium heat and melt 1 tablespoon of butter. Divide the zucchini mixture into 4 equal portions, drop into the skillet, and press down to form flat rounds about 1/2-inch thick.
- Cook undisturbed for 4 to 5 minutes until the bottom is golden brown and firm. Flip and cook for another 3 to 4 minutes until both sides are crispy. Remove and set aside.
- Wipe the skillet clean if necessary and return to medium-low heat. Add the remaining tablespoon of butter. Place two zucchini rounds in the skillet, pile shredded cheese onto the center of each, and top with the remaining two rounds. Press down gently.
- Cover the skillet with a lid for 2 to 3 minutes to help the cheese melt. Remove the lid, flip the sandwiches carefully, and cook for another 2 minutes until the crusts are extra crunchy and golden brown.
- Transfer to a cutting board and let rest for 1 to 2 minutes. Slice in half and serve immediately.

Notes
Extracting every drop of water from the grated zucchini is crucial for the crusts to hold together. Use a wide, thin spatula when flipping to maintain structural integrity. Low-moisture, high-melt cheeses like sharp cheddar, low-moisture mozzarella, or Gouda are recommended for the best cheese-pull. Serves 2 generous sandwiches.
