Instructions
- Lay tortillas flat on a clean cutting board.
- Evenly sprinkle shredded cheese over one tortilla, leaving a small ½-inch border around the edge.
- Place the second tortilla on top of the cheese-covered one, pressing down gently to help the cheese stick.
- Lightly spray or brush the top of the quesadilla with cooking spray or olive oil. Do not flip it.
- Place the oiled quesadilla into the air fryer basket, oiled side up.
- Set the air fryer to 375°F (190°C) and cook for 3 minutes.
- Remove the basket, flip the quesadilla using a spatula or tongs, and spray or brush the new top side with oil.
- Return to the air fryer and cook for another 2-3 minutes, or until the top is golden brown and crispy and the cheese is melted.
- Remove from the air fryer and let rest for about 30 seconds.
- Slice into wedges and serve immediately.

Use freshly grated cheese for better melting. Do not overfill to prevent cheese from spilling. A 2-minute preheat of the air fryer is recommended for crisper results. Letting the quesadilla rest for 30 seconds to 1 minute before cutting helps the cheese set.
