Step 1: Prep and Dry the Chicken

  1. Remove the chicken drumsticks from the refrigerator 15 minutes before cooking to take the chill off the meat. Take paper towels and thoroughly pat down each drumstick until the surface skin is completely dry. Moisture creates steam, which prevents the skin from crisping properly.

Step 2: Blend the Dry Rub

  1. In a small bowl, whisk together the smoked paprika, garlic powder, onion powder, kosher salt, black pepper, dried oregano, dried thyme, cayenne pepper, and baking powder. The baking powder elevates the skin’s pH balance, allowing proteins to break down and create micro-blisters that turn intensely crunchy during frying.

Step 3: Oil and Coat

  1. Place the dried drumsticks in a large prep bowl. Drizzle with the olive oil, tossing by hand until every crevice is lightly coated. Sprinkle the seasoning blend evenly across the drumsticks, rubbing it into the skin, around the base, and under loose edges.

Step 4: First Stage Air Frying (Render & Cook Through)

  1. Preheat your air fryer to 380°F (193°C) for 3 minutes. Arrange the drumsticks in a single layer in the air fryer basket, ensuring a finger’s width of space between each piece for hot air circulation. Avoid overlapping or stacking.
  2. Cook at 380°F (193°C) for 10 minutes . Open the basket, use silicone tongs to flip each drumstick, and air fry for another 10 minutes .

Step 5: Second Stage Air Frying (Flash Crisp)

  1. Increase the air fryer heat to 400°F (204°C) . Cook the drumsticks for an additional 3 to 4 minutes without flipping. This high-intensity burst renders out remaining subcutaneous fat and caramelizes the outer rub.

Step 6: Verify and Rest

  1. Insert a digital meat thermometer into the thickest part of the meat without touching the bone. Chicken drumsticks are technically safe at 165°F (74°C), but dark meat tastes juicier and has a far more tender, pull-apart texture when brought to 185°F to 190°F (85°C to 88°C) , where tough collagen dissolves into gelatin.
  2. Transfer the drumsticks to a warm serving platter and allow them to rest undisturbed for 5 minutes before serving. This lets the hot juices redistribute into the center rather than pooling onto the plate.
