  2. Mix the batter: Add the corn, self-rising flour, egg, and milk to a mixing bowl. Stir gently until combined. Do not overmix; the batter should be thick and scoopable with visible corn.
  3. Heat the oil: Pour enough cooking oil into a skillet to generously coat the bottom. Heat over medium heat until a small drop of batter sizzles gently.
  4. Add the fritters: Scoop portions of batter into the skillet and flatten slightly with the back of a spoon. Do not overcrowd the pan.
  5. Cook until golden: Cook for about 2–3 minutes per side, or until golden brown and cooked through. Flip carefully with a spatula.
