A wholesome baked vegetable slice made with zucchini, broccoli, spinach, peas, eggs, cottage cheese, and cheddar. This easy one-pan recipe is perfect for breakfast, lunch, snacks, meal preparation, or light dinners.
Ingredients
- 1½ tablespoons olive oil
- 1 medium onion, finely chopped
- 1 medium zucchini (about 220 g), grated and squeezed dry
- 2 cups broccoli, finely chopped
- 2 cups baby spinach leaves, roughly chopped
- 1 garlic clove, finely chopped
- ½ cup frozen baby peas
- 5 large eggs, lightly whisked
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
- 5 oz (150 g) self-raising flour
- 7 oz (200 g) low-fat cottage cheese
- 4 oz (115 g) grated cheddar cheese

- Preheat oven to 180°C (355°F). Grease a baking pan and line it with baking paper.
- Heat olive oil in a frying pan over medium heat. Add onion and cook for 5–6 minutes until soft and lightly golden. Set aside to cool slightly.
- Grate zucchini and squeeze out excess moisture. Chop broccoli into small pieces. Roughly chop spinach. Finely chop garlic.
- Whisk eggs, Dijon mustard, salt, and pepper in a large bowl. Add flour and mix until smooth. Stir in cottage cheese and cheddar.
- Fold in: Cooked onion, Garlic, Zucchini, Broccoli, Spinach, Peas. Mix until evenly combined. Add remaining olive oil and stir gently.
- Pour mixture into prepared pan. Spread evenly. Bake for approximately 35 minutes until golden and fully set. Check by inserting a knife into the center; it should come out clean.
- Allow the slice to cool for 5–10 minutes. Remove from the pan and cut into portions. Serve warm or at room temperature.

Store in an airtight container in the refrigerator for up to 4 days. Reheat in an oven, frying pan, or microwave. Cool completely before storing. Helpful Tips: Remove as much moisture as possible from the zucchini. Cook onions until soft and lightly golden for better flavor. Cut vegetables into evenly sized pieces. Mix the batter thoroughly before adding vegetables. Spread the mixture evenly in the baking pan. Let the slice cool slightly before cutting. Avoid overbaking to keep the texture soft.
