A recipe for easy beef cracker bites that are crispy on the outside and juicy on the inside, perfect for party appetizers, lunchbox snacks, or weeknight dinners.

Ingredients

  • 1 pound lean ground beef
  • 1 cup crushed buttery crackers
  • 1 cup shredded sharp cheddar cheese
  • 1 large egg
  • 2 tablespoons milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon chopped fresh parsley
  • Cooking spray
  • Optional Dipping Sauces: Ranch dressing, Barbecue sauce, Honey mustard, Buffalo sauce, Spicy garlic aioli

Instructions

  1. In a large mixing bowl, combine the ground beef, crushed crackers, shredded cheddar cheese, egg, milk, garlic powder, onion powder, smoked paprika, salt, black pepper, and parsley. Mix gently until everything is evenly combined, avoiding overmixing.
  2. Using your hands or a small cookie scoop, form the mixture into bite-sized balls approximately 1 to 1½ inches in diameter. Place them on a plate or tray while you prepare the air fryer.
  3. Preheat your air fryer to 375°F (190°C) for about 3 minutes.
  4. Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the beef cracker bites in a single layer, leaving a little space between each one for proper air circulation. Cook in batches if necessary.
  5. Cook the bites at 375°F (190°C) for 10–12 minutes, turning them halfway through the cooking time until the outside is browned and crispy and the internal temperature reaches 160°F (71°C).
  6. Allow the bites to rest for 2–3 minutes after cooking to help juices redistribute. Serve immediately with your favorite dipping sauces and garnish with fresh parsley if desired.

Notes

Use lean ground beef (85–90% lean) to avoid excess grease. Freshly shredded cheese melts better than pre-shredded cheese. Don’t overcrowd the air fryer basket. If the mixture feels too wet, add a few extra crushed crackers; if too dry, mix in a tablespoon of milk. Storage: Refrigerate leftovers in an airtight container for up to 4 days. Freezing: Freeze cooked bites on a baking sheet until solid, then transfer to a freezer-safe container for up to 3 months. Reheating: Reheat in the air fryer at 350°F (175°C) for 3–5 minutes. Baking alternative: Bake at 400°F (200°C) for 18–20 minutes, turning once halfway through.
