Traditional oven baking often leaves bread soggy in the center when topped with wet sauces, while standard toasters cannot handle bubbling cheeses or loose toppings. The air fryer solves both challenges by circulating high-velocity dry heat around the base and top simultaneously, creating a moisture barrier and caramelizing cheese without drying out the bread crumb.

Ingredients

  • 4 thick slices of bread (Sourdough, thick-cut Texas toast, brioche, or sturdy French country bread)
  • 1/2 cup (120 ml) thick, low-moisture pizza sauce or marinara
  • 1 to 1.5 cups (115 to 170 g) freshly shredded low-moisture mozzarella cheese
  • 16 to 20 slices of pepperoni or salami
  • 1 tablespoon extra virgin olive oil or melted butter
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 2 tablespoons grated Parmesan cheese
  • Fresh basil or red pepper flakes (optional garnish)

Instructions

  1. Preheat your air fryer to 375°F (190°C) for 2 to 3 minutes.
  2. In a small bowl, stir together the olive oil (or melted butter) and garlic powder. Lightly brush one side of each slice of bread with the seasoned oil mixture.
  3. Place the bread slices into the air fryer basket in a single layer, oiled-side down. Air fry at 375°F (190°C) for 2 minutes to create a firm, toasted surface.
  4. Carefully pull the air fryer basket out. Flip each bread slice so the oiled, lightly crisped side is now facing up.
  5. Spoon 2 tablespoons of pizza sauce onto the center of each slice, spreading it evenly toward the crust edges while leaving a 1/4-inch border.
  6. Layer a generous handful of shredded mozzarella across the sauce, ensuring the cheese touches the edges slightly to anchor the toppings.
  7. Arrange pepperoni slices across the cheese, pressing them firmly into the shredded cheese or placing a pinch of extra mozzarella over top to weigh them down.
  8. Dust the tops with grated Parmesan and dried Italian seasoning.
  9. Return the assembled slices to the air fryer basket in a single layer, ensuring they do not overlap. Cook at 375°F (190°C) for 3 to 4 minutes.
  10. Check at the 3-minute mark: The cheese should be bubbling and melted with golden-brown spots, and the bread edges should be deep golden-brown. If you prefer well-done, blistered cheese, add 1 additional minute.
  11. Use a flat silicone spatula to transfer the toasts onto a wooden cutting board. Let them rest for 60 to 90 seconds to allow the hot cheese to set slightly.
