Ingredients

Instructions

  1. Preheat your oven to 425°F (220°C). Spread the frozen French fries in a single, even layer on a large, rimmed baking sheet lined with parchment paper. Lightly spray the fries with cooking oil and sprinkle evenly with seasoning salt. Bake for 20 to 25 minutes, shaking or flipping halfway through, until golden brown and extra crispy. Remove from the oven and set aside.
  2. Pat the cubed chicken dry with paper towels. In a medium mixing bowl, toss the cubed chicken with olive oil, smoked paprika, garlic powder, onion powder, ground cumin, salt, and black pepper until every piece is evenly coated. Place a large skillet over medium-high heat and add a tiny drizzle of oil. Once hot, add the seasoned chicken pieces in a single layer. Let them sear undisturbed for 3 to 4 minutes, then flip and cook for another 3 to 5 minutes until completely cooked through. Remove from heat and set aside.
  3. Switch your oven setting to Broil (high heat). Transfer the hot, crispy baked fries onto an oven-safe cast-iron skillet, a baking dish, or keep them on the parchment-lined baking sheet. Evenly distribute the warm, seasoned chicken bites over the top of the fries. Generously scatter the shredded cheddar and Monterey Jack cheese over the entire surface.
  4. Place the loaded baking dish under the broiler for 2 to 3 minutes. Watch closely until the cheese is fully melted and lightly browned on top.
  5. Scatter the crispy crumbled bacon, sliced green onions, and fresh jalapeños evenly across the hot cheese. Add a zig-zag drizzle of sour cream, ranch, or chipotle mayo. Serve immediately.

Notes

Shred Your Own Cheese: Pre-bagged shredded cheese contains anti-caking agents that prevent it from melting smoothly. Grating a block of cheddar and Monterey Jack yields a much smoother, restaurant-quality cheese pull. Keep It Crispy: If serving a large crowd, assemble on a sturdy platter and serve a warm cheese sauce on the side to prevent the bottom fries from getting soggy. Customize Your Heat: Swap out standard jalapeños for pickled jalapeños, or add a dash of hot sauce to the chicken marinade.
