Here’s a great stovetop quick bread recipe that doesn’t require an oven. This method uses a heavy skillet or pot with a lid to create a mini “oven” on your stovetop.

  • Heavy-bottomed skillet or Dutch oven with a tight-fitting lid
  • Mixing bowls
  • Wooden spoon or spatula
  • Wire rack for cooling

Ingredients

  • 2 cups all-purpose flour (or whole wheat flour)
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 tbsp sugar (optional, for a slightly sweet bread)
  • 1 cup milk (or buttermilk for a tangier flavor)
  • ¼ cup melted butter or oil
  • 1 large egg
  • 1 tbsp butter or oil for greasing
  • 2 tbsp flour for dusting (optional)

Instructions

  1. Place your heavy skillet or pot on the stove over low heat and let it preheat for about 5 minutes. Grease it generously with butter or oil.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together the milk, melted butter (or oil), and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Don’t overmix — a few lumps are fine. Overmixing makes the bread tough.
  5. Pour the batter into the preheated, greased skillet. Spread it evenly with a spatula.
  6. Cover the skillet with a tight-fitting lid. Cook on low heat for 25–35 minutes.
  7. Check for doneness: The top is set and no longer looks wet, a toothpick inserted into the center comes out clean, and the edges pull away slightly from the pan.
  8. If the bottom is browning too fast but the center isn’t cooked, carefully flip the bread with a spatula and cook for another 5–10 minutes uncovered.
  9. Transfer the bread to a wire rack and let it cool for 10 minutes before slicing.

Low and Slow: Keep the heat low. High heat burns the bottom before the center cooks. Tight Lid: Traps steam and heat, mimicking an oven. Don’t Peek: Resist lifting the lid for the first 20 minutes. Add-Ins: Try cheese, herbs, jalapeños, raisins, or nuts for variety. Doubling: Use a larger pot and increase cooking time. Alternative Steam Method: Pour batter into a greased heatproof bowl. Place in a pot with 2 inches of boiling water. Cover and steam for 35–40 minutes.
