Here’s a great stovetop quick bread recipe that doesn’t require an oven. This method uses a heavy skillet or pot with a lid to create a mini “oven” on your stovetop.

- Place your heavy skillet or pot on the stove over low heat and let it preheat for about 5 minutes. Grease it generously with butter or oil.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together the milk, melted butter (or oil), and egg until well combined.
- Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Don’t overmix — a few lumps are fine. Overmixing makes the bread tough.
- Pour the batter into the preheated, greased skillet. Spread it evenly with a spatula.
- Cover the skillet with a tight-fitting lid. Cook on low heat for 25–35 minutes.
- Check for doneness: The top is set and no longer looks wet, a toothpick inserted into the center comes out clean, and the edges pull away slightly from the pan.
- If the bottom is browning too fast but the center isn’t cooked, carefully flip the bread with a spatula and cook for another 5–10 minutes uncovered.
- Transfer the bread to a wire rack and let it cool for 10 minutes before slicing.

Low and Slow: Keep the heat low. High heat burns the bottom before the center cooks. Tight Lid: Traps steam and heat, mimicking an oven. Don’t Peek: Resist lifting the lid for the first 20 minutes. Add-Ins: Try cheese, herbs, jalapeños, raisins, or nuts for variety. Doubling: Use a larger pot and increase cooking time. Alternative Steam Method: Pour batter into a greased heatproof bowl. Place in a pot with 2 inches of boiling water. Cover and steam for 35–40 minutes.
