Ingredients
For the Caramelized Onion Base:
- 3 large Yellow or Sweet Vidalia Onions (sliced thinly, about 6 cups raw)
- 2 tbsp Unsalted Butter
- 1 tbsp Extra-Virgin Olive Oil
- 1 tsp Granulated Sugar (helps accelerate caramelization)
- ½ tsp Kosher Salt
- 4 cloves Garlic, minced
- ½ cup Dry White Wine (Pinot Grigio or Sauvignon Blanc) or substitute extra beef broth
For the Chicken & Braising Liquid:
- 2 lbs (approx. 4 large) Boneless, Skinless Chicken Breasts (or chicken thighs)
- 1½ cups Low-Sodium Beef Broth (or rich beef bone broth)
- 1 tbsp Worcestershire Sauce
- 1 tbsp Fresh Thyme Leaves (or 1 tsp dried thyme)
- 1 whole Dried Bay Leaf
- ½ tsp Black Pepper, freshly cracked
- 1 tbsp Cornstarch + 2 tbsp Cold Water (optional slurry to thicken gravy)
The Cheese Topping:
- 1 cup Gruyère Cheese, freshly shredded
- 1 cup Swiss Cheese or Provolone, shredded or sliced
- 2 tbsp Fresh Parsley, finely chopped (for garnish)
- French Baguette slices , toasted (optional, for serving underneath)

Instructions
- Heat the butter and olive oil in a large skillet over medium-low heat. Add the sliced onions, sugar, and ½ teaspoon salt. Cook low and slow, stirring occasionally, until the onions soften, reduce, and turn a rich golden brown color (about 15 minutes). Add minced garlic and cook for 1 minute until fragrant.
- Pour the dry white wine into the skillet to deglaze, scraping up all the browned bits (fond) stuck to the bottom of the pan. Let the wine simmer for 2 minutes until reduced by half.
- Season chicken breasts on both sides with salt and cracked black pepper. Place the chicken in an even single layer at the bottom of the slow cooker insert. Spread the caramelized onions evenly over the top of the chicken.
- In a measuring cup, whisk together the beef broth, Worcestershire sauce, and fresh thyme. Pour the mixture around the chicken. Nestled the bay leaf into the liquid. Cover and cook on LOW for 5 to 6 hours (or HIGH for 3 hours), until chicken reaches an internal temperature of $165^\circ\text{F}$ ( $74^\circ\text{C}$ ).
- Transfer cooked chicken breasts to a plate and cover loosely with foil. Discard the bay leaf. Whisk cornstarch and cold water together in a small bowl, then stir into the simmering slow cooker liquid. Cover and cook on HIGH for 10 minutes until the gravy thickens into a rich French onion sauce. Return chicken to the slow cooker.
- Top each chicken breast generously with shredded Gruyère and Swiss cheese. Place the lid back on the slow cooker for 5–10 minutes until melted, OR transfer chicken and sauce to an oven-safe dish and broil under HIGH heat for 3–4 minutes until the cheese is golden brown and bubbling. Garnish with fresh parsley.
