They come together in under 30 minutes with a handful of pantry staples, and the air fryer keeps them light without deep frying. Serve them over rice, tucked into tacos, or piled on a salad — and dunk them in the creamy sriracha dip.

Instructions

Step 1: Prep the Salmon (5 minutes)

  1. Pat the salmon cubes thoroughly dry with paper towels — moisture is the enemy of crispiness. In a mixing bowl, toss the salmon with olive oil, lime juice, smoked paprika, garlic powder, onion powder, cayenne, chili powder, salt, and black pepper until evenly coated. Let it sit for 5 minutes while you prepare the coating.

Step 2: Make the Coating (2 minutes)

  1. In a shallow bowl, combine the panko breadcrumbs and Parmesan (if using). Working in batches, press each salmon cube into the panko mixture, turning to coat all sides. Gently press the crumbs on so they adhere. Place the coated bites on a plate — don’t stack them.

Step 3: Preheat the Air Fryer (3 minutes)

  1. Preheat your air fryer to 400°F (200°C) for 3 minutes. Preheating is essential for that crispy exterior. Lightly spray the air fryer basket with cooking spray.

Step 4: Air Fry (8–10 minutes)

  1. Arrange the salmon bites in a single layer in the basket, leaving space between them — cook in batches if needed. Lightly spray the tops with cooking spray. Air fry at 400°F (200°C) for 8–10 minutes , shaking the basket gently halfway through, until the coating is golden and crispy and the salmon flakes easily with a fork (internal temperature 145°F / 63°C).

Step 5: Make the Dip (2 minutes)

  1. While the salmon cooks, whisk together the Greek yogurt, mayonnaise, sriracha, lime juice, grated garlic, and salt in a small bowl. Taste and adjust the heat to your liking.

Step 6: Serve

  1. Transfer the salmon bites to a serving platter. Garnish with scallions, sesame seeds, and cilantro, and serve immediately with lime wedges and the creamy sriracha dip.
