Instructions

1. Make the dough — 5 minutes

  1. Add the flour and salt to a large mixing bowl.
  2. Gradually add the warm water while stirring, followed by the olive oil.
  3. Mix until a soft dough forms.
  4. Texture cue: The dough should be soft and pliable, but it shouldn’t feel excessively sticky.

2. Knead the dough — 6–8 minutes

  1. Transfer the dough to a lightly floured work surface.
  2. Knead for 6–8 minutes until smooth and elastic.
  3. Press the dough with your fingertip; it should slowly spring back.

3. Rest the dough — 30 minutes

  1. Lightly oil the dough and place it in a covered bowl.
  2. Leave it at room temperature for 30 minutes .
  3. This resting period relaxes the gluten and makes the dough much easier to stretch thin.

4. Prepare the cheese filling — 2 minutes

  1. In a bowl, combine mozzarella, cheddar, garlic powder, oregano, black pepper, and parsley.
  2. Mix gently until evenly combined.

5. Divide the dough — 2 minutes

  1. Divide the rested dough into 6 equal portions .
  2. Roll each portion into a smooth ball and keep the remaining pieces covered while working.

6. Roll the dough thin — 1–2 minutes per piece

  1. Roll one dough ball into a thin circle, approximately 8 inches wide .
  2. Brush lightly with softened or melted butter.
  3. Don’t apply too much butter because excessive fat can make sealing difficult.

7. Add the cheese — 1 minute

  1. Place approximately ⅓ cup of the cheese mixture in the center of the dough.
  2. Leave about 1½ inches of dough around the edges .
  3. Fold the edges inward over the cheese and pinch gently to seal.
  4. Turn the sealed dough over.

8. Flatten gently — 1 minute

  1. Using your hands or rolling pin, gently flatten the filled dough into a round approximately ¼ inch thick .
  2. Use light pressure so the cheese stays enclosed.
  3. Texture cue: The dough should be evenly flattened without visible holes or cheese breaking through.

9. Heat the skillet — 2 minutes

  1. Place a heavy skillet over medium heat .
  2. Allow it to heat for about 2 minutes .
  3. Lightly grease the surface with butter or oil.

10. Cook the cheese bread — 2–3 minutes per side

  1. Place one filled bread into the hot skillet.
  2. Cook over medium heat for 2–3 minutes , until golden-brown patches appear underneath.
  3. Flip carefully and cook for another 2–3 minutes .
  4. Visual cue: The bread should puff slightly, develop golden spots, and feel cooked through rather than doughy.
  5. If it browns too quickly, reduce the heat to medium-low so the cheese has time to melt.

11. Keep cooked breads soft

  1. Transfer the finished bread to a plate and cover it immediately with a clean kitchen towel.
  2. Repeat with the remaining dough.
  3. Covering the bread helps retain moisture and keeps the layers tender.

12. Serve warm

  1. Let the bread rest for 1–2 minutes , then slice or tear it open.
  2. The center should contain warm, melted cheese , while the exterior should be golden and lightly crisp.
  3. For a high-protein meal, serve with eggs, Greek yogurt, cottage cheese, or grilled chicken.

Notes

Storage: Refrigerate for 3–4 days in an airtight container. Freezing: Freeze individually wrapped breads for up to 2 months. Reheating: A skillet or air fryer gives the best texture. Reheating tip: Use medium-low heat so the cheese warms before the outside becomes too dark. Allergy notes: Contains wheat/gluten and dairy . Dairy-free option: Use a suitable dairy-free melting cheese and plant-based butter. Flavor boost: Add minced garlic, chili flakes, parsley, cilantro, or za’atar to the filling. Cheese variation: Try mozzarella with feta, cheddar, Monterey Jack, or provolone. High-protein tip: Pair the bread with eggs, Greek yogurt, cottage cheese, or lean meat rather than eating it alone. Extra crispy finish: Brush the cooked bread very lightly with butter and return it to the skillet for about 30 seconds per side.
