Servings12 wonton cups (6 servings of 2 wontons each)

Equipment

  • Standard 12-cup non-stick muffin pan
  • Large mixing bowl
  • Chef’s knife and cutting board
  • Non-stick cooking oil spray (olive oil or avocado oil spray)
  • Measuring cups and spoons
  • Meat shredding forks (if prepping chicken from whole breasts)

Ingredients

Wonton Shells

  • 24 wonton wrappers: Standard square wonton skins (using a double layer per cup ensures a sturdy base that stays crunchy without becoming soggy).
  • Cooking spray: High-smoke-point olive oil or avocado oil spray.

Chicken Taco Filling

  • 2 cups cooked chicken breast: Shredded finely (store-bought rotisserie chicken, poached chicken, or leftover baked breast).
  • 2 tbsp low-sodium taco seasoning: Standard blend containing chili powder, ground cumin, garlic powder, onion powder, paprika, and oregano.
  • 1/3 cup chunky red salsa: Medium or mild, drained slightly to prevent excess liquid pooling.
  • 1/2 cup canned black beans: Rinsed thoroughly and drained.
  • 1/3 cup sweet corn kernels: Fresh, thawed frozen, or canned (well-drained).
  • 4 oz cream cheese: Softened to room temperature (adds silkiness and binds the chicken mixture).
  • 1 1/4 cups shredded Mexican four-cheese blend: Divided (Monterey Jack, Cheddar, Asadero, and Queso Quesadilla).

Fresh Garnishes & Toppings

  • 1/3 cup sour cream or plain Greek yogurt
  • 1 medium Roma tomato: Seeded and diced small
  • 2 scallions (green onions): Thinly sliced
  • 2 tbsp fresh cilantro: Minced
  • 1 medium jalapeño: Sliced into thin rounds (optional, for extra heat)
  • 1 fresh lime: Cut into small wedges for serving

Instructions

Step 1: Pan Preparation and Oven Setup

  1. Preheat your oven to 375°F (190°C). Position the oven rack in the center position to promote even browning across the top edges and crisp bottom baking. Lightly coat all 12 wells of a standard muffin tin with non-stick cooking spray.

Step 2: Form the Double-Layered Wonton Shells

  1. Take 12 wonton wrappers and press one into the bottom of each muffin cup, gently pressing the wrapper flat against the bottom and folding the four points up against the sides.
  2. Lightly mist the inner surface of each wrapper with cooking spray. Take the remaining 12 wonton wrappers and place a second wrapper directly into each well, slightly rotating it at a 45-degree angle so the corners form an eight-pointed flower pattern. Press gently along the bottom and sides so both wrappers adhere firmly.

Step 3: Blind Bake for Crisp Architecture

  1. Place the prepared muffin tin with empty wrappers into the preheated oven. Bake at 375°F (190°C) for 5 minutes .
  2. The wrapper edges will just begin to dry out and turn faint pale gold. Pre-baking creates a moisture barrier that guarantees the bottom remains crispy under the hot filling. Remove the pan from the oven and set it aside while mixing the filling.

Step 4: Mix the Seasoned Filling

  1. In a large mixing bowl, combine the softened cream cheese, taco seasoning, and chunky salsa. Stir using a silicone spatula until smooth and uniform.
  2. Fold in the shredded chicken breast, rinsed black beans, sweet corn, and 3/4 cup of the shredded Mexican cheese blend. Stir until the chicken shreds and vegetables are coated evenly in the spiced cream cheese base.

Step 5: Fill and Top

  1. Spoon approximately 2 rounded tablespoons of the chicken filling into each pre-baked wonton shell. Pack the mixture gently into the base without smashing the delicate outer crust.
  2. Evenly divide the remaining 1/2 cup of shredded Mexican cheese across the top of all 12 cups.

Step 6: Bake to Golden Perfection

  1. Return the filled muffin tin to the oven. Bake at 375°F (190°C) for 9 to 11 minutes .
  2. Watch closely during the final two minutes: the filling should be bubbling, the top cheese fully melted with light speckled brown patches, and the tips of the wonton wrappers deep golden brown and crisp.

Step 7: Rest, Garnish, and Serve

  1. Remove the pan from the oven and let the wonton cups rest inside the muffin wells for 3 to 4 minutes . This resting window allows the melted cheese to set slightly so the cups lift out cleanly without tearing.
  2. Run a butter knife gently around the rim of each well if needed, lift out the cups, and transfer them to a serving platter. Dollop each cup with sour cream or plain Greek yogurt, sprinkle with diced tomato, sliced green onions, and fresh cilantro, and finish with a squeeze of fresh lime.
