Ingredients

  • 1 ½ cups all-purpose flour (divided: 1 cup + 2 tablespoons for batter, 1 tablespoon for coating berries, remaining for pan prep)
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ½ cup granulated sugar
  • 1 large egg, room temperature
  • ½ cup buttermilk (or whole milk mixed with ½ teaspoon lemon juice)
  • ¼ cup unsalted butter, melted and cooled slightly
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon zest
  • 1 cup fresh or frozen blueberries (if using frozen, do not thaw)

Instructions

1. Prep the Air Fryer and Pan

  1. Preheat your air fryer to 325°F (160°C) for 3 to 5 minutes.
  2. Lightly grease a 6×3-inch loaf pan with nonstick cooking spray or butter, then dust with a tablespoon of flour, tapping out any excess. Note: Ensure your loaf pan comfortably fits inside your air fryer basket with at least half an inch of clearance around the sides for proper airflow.

2. Whisk the Dry Ingredients

  1. In a medium mixing bowl, sift together 1 cup + 2 tablespoons of all-purpose flour, the 1 teaspoon baking powder , ¼ teaspoon baking soda , and ½ teaspoon salt . Set aside.

3. Toss the Blueberries

  1. In a small separate bowl, toss the 1 cup of blueberries with 1 tablespoon of all-purpose flour until every berry is evenly coated. Coating the berries prevents them from sinking to the bottom of the pan while the loaf bakes.

4. Mix the Wet Ingredients

  1. In a large bowl, whisk together ½ cup granulated sugar , 1 large egg , ½ cup buttermilk , ¼ cup melted butter , 1 teaspoon vanilla extract , and 1 teaspoon fresh lemon zest until smooth and emulsified.

5. Combine and Fold

  1. Pour the wet mixture into the dry mixture. Using a rubber spatula, gently fold the batter together just until combined. Avoid overmixing, as overworking the batter will yield a dense loaf.
  2. Gently fold in the flour-coated blueberries until distributed evenly throughout the batter.

6. Air Fry the Bread

  1. Transfer the batter into the prepared mini loaf pan, smoothing the top with your spatula.
  2. Carefully place the loaf pan into the preheated air fryer basket.
  3. Air fry at 325°F (160°C) for 30 to 35 minutes .
  4. Around the 20-minute mark, check the loaf. If the top is browning too quickly while the middle is still liquid, loosely tent a piece of aluminum foil over the top of the loaf pan to prevent burning, then continue air frying.

7. Test and Cool

  1. The bread is done when a wooden skewer or toothpick inserted into the center comes out clean or with a few moist crumbs (and no wet batter).
  2. Carefully remove the loaf pan from the air fryer using oven mitts or heat-resistant tongs. Let the bread cool in the pan on a wire rack for 15 minutes .
  3. Run a butter knife gently around the edges of the pan, invert the loaf to release it, and transfer it to a wire rack to cool completely before slicing.
