Crispy Air Fryer Crab Cakes. Prep Time: 15 minutes, Chill Time: 30 minutes (crucial for holding shape), Cook Time: 10–12 minutes, Total Time: 55 minutes. Servings: 4 (Yields 4 large or 8 mini crab cakes). Intensity/Skill Level: Easy / Beginner-Friendly.
Ingredients
- 1 lb lump crab meat (picked over carefully for any stray shell fragments)
- 1/3 cup panko breadcrumbs (plus extra for coating if desired)
- 3 tbsp mayonnaise (acts as the primary binder)
- 1 large egg, lightly beaten
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 1 tsp Worcestershire sauce
- 1 tsp Old Bay seasoning
- 1 tsp fresh parsley, finely chopped
- 1/2 tsp garlic powder
- 1/4 tsp salt (adjust to taste)
- 1/4 tsp black pepper, freshly cracked
- 1 tbsp unsalted butter, melted (or cooking spray/avocado oil for crisping)
- Fresh lemon wedges (for serving)
- Remoulade sauce, tartar sauce, or a spicy sriracha aioli (for serving)
- Extra chopped fresh parsley for garnish (for serving)
Instructions
- Gently empty the lump crab meat onto a clean cutting board or a plate lined with paper towels. Carefully run your fingers through the crab meat to check for and remove any hard cartilage or shell fragments. Try not to break up the large lumps too much. Set aside.
- In a medium-sized mixing bowl, combine the mayonnaise, beaten egg, Dijon mustard, fresh lemon juice, Worcestershire sauce, Old Bay seasoning, chopped parsley, garlic powder, salt, and black pepper. Whisk these ingredients together thoroughly until smooth and well-incorporated.
- Add the 1/3 cup of panko breadcrumbs into the wet mixture and stir to combine. Next, add your cleaned lump crab meat to the bowl. Using a rubber spatula or a large spoon, gently fold the mixture together from the bottom up to ensure the crab meat is evenly coated with the binder without breaking up the delicate lumps.
- Cover the mixing bowl tightly with plastic wrap and place it in the refrigerator for at least 30 minutes. Do not skip this step! Chilling allows the panko breadcrumbs to absorb the excess moisture and helps the crab cakes firm up so they hold their shape perfectly in the air fryer basket without falling apart.
- Divide the chilled mixture into 4 equal portions (for large dinner-sized cakes) or 8 portions (for appetizer-sized sliders). Gently form each portion into a thick patty, pressing lightly so they hold together, but avoid packing them too tightly. If desired, lightly press an extra pinch of panko onto the top and bottom of each cake for added crunch.
- Preheat your air fryer to 380°F (190°C) for 3 to 5 minutes. While the air fryer heats up, lightly brush or spray the air fryer basket or tray with a high-smoke-point oil (such as avocado oil) to prevent sticking.
- Carefully place the crab cakes in a single layer inside the air fryer basket, leaving a little space between each one for proper air circulation. Do not overcrowd the basket; cook in batches if necessary. Lightly brush the tops of the crab cakes with melted butter or spray them generously with cooking oil/avocado oil. Cook at 380°F (190°C) for 10 to 12 minutes, flipping them carefully halfway through (around the 6-minute mark) and lightly spraying the second side with oil. Cook until the exterior is deeply golden-brown and the internal temperature reaches 145°F.
- Remove the crab cakes from the air fryer using a spatula. Let them rest for 2 to 3 minutes so they can firm up slightly before serving. Garnish with fresh parsley and serve immediately alongside lemon wedges and your favorite dipping sauce.
Notes
Quality Matters: Always use fresh lump or jumbo lump crab meat from the seafood counter if possible. Avoid pasteurized canned crab meat packed in liquid when you can, as it tends to be watery and lacks natural sweetness. Oil Selection: Avoid using standard non-stick cooking sprays that contain propellants like lecithin, as they can damage the non-stick coating of your air fryer basket over time. Instead, use a pump bottle filled with pure avocado or canola oil, or brush on melted butter. Leftovers and Reheating: Store leftover crab cakes in an airtight container in the refrigerator for up to 2 days. To reheat, pop them back into the air fryer at 350°F for 3 to 4 minutes until heated through and re-crisped.
