Instructions
Step 1: Preheat and Prepare
- Preheat your air fryer to 250°F (120°C) . While the air fryer is heating up, remove the eggs from the refrigerator. Do not poke holes in the eggs; the air fryer method works best with intact shells.
Step 2: Air Fry the Eggs
- Place the eggs directly on the air fryer rack or basket in a single layer. Ensure they are not touching each other to allow for even air circulation.
- Time: 16 minutes
- Temperature: 250°F (120°C)
- Intensity: Low (Passive cooking)
- Note: If you have a smaller air fryer, you may need to cook in batches.
Step 3: The Ice Bath (Crucial Step)
- As soon as the air fryer beeps, carefully remove the eggs using tongs. Immediately transfer them to a large bowl filled with ice water. Let them sit for at least 10 minutes . This stops the cooking process and prevents the yolks from turning gray-green.
Step 4: Peel the Eggs
- Gently tap the eggs on a hard surface to crack the shell, then roll them gently with your hand. Peel the shells under running water if you find them sticking. The shells should slide off easily.
Step 5: Prepare the Filling
- Slice the peeled eggs in half lengthwise. Gently scoop out the yolks and place them in a medium mixing bowl. Arrange the egg white halves on your serving platter.
- Mash the yolks with a fork until they are fine and crumbly. Add the mayonnaise, Dijon mustard, vinegar, salt, and pepper. Mix until smooth and creamy. If the mixture feels too thick, add a tiny splash of milk or extra mayo.
Step 6: Pipe and Garnish
- Transfer the yolk mixture to a piping bag or a Ziploc bag with the tip cut off. Pipe the mixture into the hollowed-out egg whites. Sprinkle with paprika and fresh herbs (if using).
Step 7: Chill and Serve
- For the best flavor, refrigerate for 20–30 minutes before serving. Serve cold.
