Instructions
Step 1: Prep & Preheat
- Preheat your oven to 375°F (190°C). While the oven heats, prepare the chicken. Place the chicken breasts on a cutting board. If they are very thick or uneven, place them between two sheets of plastic wrap and gently pound the thicker ends with a meat mallet or rolling pin until they are a relatively even thickness (about ¾-inch). This ensures they cook evenly and stay juicy. Pat the chicken dry with paper towels—this helps the coating stick.
Step 2: Create the “Magic” Coating
- In a medium mixing bowl, combine the mayonnaise, grated Parmesan cheese, seasoned salt, garlic powder, black pepper, and paprika. Stir until the mixture is completely smooth and uniform. The consistency should be like a thick, spreadable paste.
Step 3: Coat the Chicken
- Place the prepared chicken breasts in the bottom of your baking dish, ensuring they aren’t crammed together (a little space allows for better heat circulation). Using a spoon or your hands, generously and evenly spread the mayonnaise-Parmesan mixture over the top and sides of each chicken breast. Aim to cover every surface in a thick, delicious layer. There’s no need to grease the dish, as the mayonnaise provides enough fat to prevent sticking.
Step 4: Bake to Perfection
- Place the baking dish in the preheated oven and bake for 30-35 minutes. The chicken is done when the internal temperature reaches 165°F (74°C) on an instant-read thermometer, the coating is deeply golden brown, and the juices run clear. For extra browning on top, you can broil for the final 1-2 minutes, but watch closely to prevent burning.
Step 5: Rest and Serve
- Once out of the oven, let the chicken rest in the dish for 5 minutes. This crucial step allows the juices to redistribute throughout the meat, guaranteeing that “melt in your mouth” texture. Garnish with fresh parsley or chives for a pop of color and freshness.
