A deliciously light and golden fruit scone made in the air fryer for a quick and easy treat. It has a soft, tender centre with a slightly crisp outside and bursts of sweetness from the fruit. Perfect for breakfast, afternoon tea, or a comforting snack, especially when served warm with butter, jam, or cream.
Ingredients
- 250 g self-raising flour
- 50 g butter
- 75 g dried mixed fruit30 g caster sugar
- 120 ml milk
- 1 tsp baking powder
- 1 tsp vanilla extract
- A pinch of salt
- Extra milk for brushing

Instructions
- Preheat the air fryer to 180°C (350°F) for 3–5 minutes.
- In a bowl, mix the flour, baking powder, salt, and sugar.
- Rub in the butter until the mixture resembles fine breadcrumbs.
- Stir in the dried fruit.
- Turn the dough onto a lightly floured surface and gently knead
- Roll or press the dough to about 2–3 cm thick and cut into 4–6 scones.

- Place the scones in the air fryer basket, leaving space between them.
- Air fry at 180°C (350°F) for 12–15 minutes, or until golden brown and cooked through.
