A beginner-friendly recipe for crispy, golden-brown grilled cheese roll-ups made in the air fryer. The bread is flattened to ensure even cooking and a crisp exterior, while the cheese melts into a rich, molten interior. Serves 4 with 2 roll-ups per serving.

Ingredients

  • 8 slices soft white sandwich bread (crusts removed)
  • 8 slices American cheese, Sharp Cheddar, or Provolone (or 1 cup freshly shredded Mozzarella)
  • 3 tbsp unsalted butter, melted
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley flakes
  • 1/4 tsp onion powder
  • 1 pinch sea salt
  • Optional: Warm marinara sauce, tomato soup, or ranch dressing for serving

Instructions

  1. Prep the Bread: Lay the sandwich bread flat on a clean cutting board. Using a sharp knife, trim off all four crusts from each slice. Use a rolling pin to press each bread slice completely flat until it is thin and pliable.
  2. Assemble the Roll-Ups: Place one slice of cheese (or roughly 2 tablespoons of shredded cheese) onto the flattened bread slice, leaving a tiny border at the top edge. Starting from the edge closest to you, roll the bread tightly around the cheese into a log shape. Repeat for all 8 slices.
  3. Mix the Garlic Butter: In a small microwave-safe bowl, melt the butter. Stir in the garlic powder, dried parsley, onion powder, and sea salt until combined.
  4. Coat and Brush: Generously brush the garlic butter mixture all over the exterior of each roll-up, paying special attention to the seam on the bottom to seal it shut.
  5. Air Fry to Golden Perfection: Preheat your air fryer to 380°F (193°C) for 2 minutes. Place the roll-ups in the air fryer basket in a single layer, seam-side down, ensuring they do not touch. Air fry at 380°F (193°C) for 6 to 8 minutes, flipping gently with tongs at the 4-minute mark, until deep golden brown and crispy.

Notes

Storage: Store leftover cooked roll-ups in an airtight container in the refrigerator for up to 3 days. Freezing: Assemble the roll-ups fully (un-cooked), place them on a parchment-lined sheet pan in the freezer for 1 hour until solid, then transfer to a freezer bag for up to 2 months. Air fry directly from frozen at 370°F (188°C) for 8–10 minutes. Reheating: Re-crisp leftovers in the air fryer at 350°F (175°C) for 3–4 minutes. Avoid microwaving, as it will make the bread chewy and soggy. Variations: Bacon & Cheddar (sprinkle cooked, crumbled bacon over cheese), Ham & Swiss (add thin slice of deli ham underneath Swiss cheese), Jalapeño Popper (spread cream cheese mixed with diced jalapeños and shredded cheddar), or Sweet Cinnamon Sugar (fill with cream cheese and strawberry jam, brush with butter, roll in cinnamon sugar after air frying).
