Instructions

Step 1: Prepare the Chicken

  1. Begin by patting the chicken breasts dry with paper towels. Removing excess moisture helps the pesto mixture coat the chicken evenly and encourages better browning.
  2. If the chicken breasts are especially thick, carefully slice them horizontally or gently pound them to an even thickness. This helps the chicken cook more evenly and prevents thinner portions from drying out before the thicker portions are done.

Step 2: Make the Pesto Marinade

  1. In a medium mixing bowl, combine the basil pesto, olive oil, minced garlic, salt, black pepper, Italian seasoning, grated Parmesan cheese, and lemon juice.
  2. Stir until everything is well combined. The pesto provides a rich basil flavor, while the garlic and Parmesan add savory depth. Lemon juice brightens the mixture and balances the richness of the olive oil and cheese.

Step 3: Coat the Chicken

  1. Add the prepared chicken breasts to the bowl. Use a spoon or clean hands to spread the pesto mixture over every side of the chicken.
  2. For the best flavor, let the chicken rest in the refrigerator for 15–30 minutes if time allows. However, you can cook it immediately if you need a quick dinner.
  3. Always refrigerate chicken while marinating, and discard any leftover marinade that has been in contact with raw chicken unless it is thoroughly cooked.

Step 4: Preheat the Air Fryer

  1. Preheat your air fryer to 375°F (190°C) for approximately 3 minutes, following your appliance’s instructions.
  2. Lightly grease the air fryer basket if necessary. Avoid using aerosol cooking sprays that may damage certain nonstick coatings; use a little oil applied with a suitable brush instead.
  3. Preheating helps the chicken begin cooking immediately and encourages even browning.

Step 5: Arrange the Chicken

  1. Place the pesto-coated chicken breasts in a single layer in the air fryer basket. Leave a little space between each piece so hot air can circulate freely.
  2. Depending on the size of your air fryer, you may need to cook the chicken in batches. Avoid overcrowding the basket because this can lead to uneven cooking.

Step 6: Air Fry the Chicken

  1. Cook the chicken at 375°F (190°C) for 12–16 minutes , turning the pieces halfway through cooking.
  2. Cooking time depends on the thickness of the chicken breasts and the model of your air fryer. Smaller or thinner pieces may cook faster, while thicker pieces may require additional time.
  3. The pesto should look fragrant and lightly browned, and the chicken should be tender and juicy. Check the thickest part of each breast with a meat thermometer. Chicken is safely cooked when it reaches an internal temperature of 165°F (74°C) .
  4. If the chicken has not reached the safe temperature, continue cooking in 2-minute increments and check again.

Step 7: Add Optional Cheese

  1. If you enjoy cheesy pesto chicken, place a thin slice of mozzarella over each breast during the final 1–2 minutes of cooking. Allow the cheese to melt without letting it become overly browned.
  2. You can also sprinkle a little additional Parmesan over the chicken just before serving.

Step 8: Rest and Serve

  1. Transfer the cooked chicken to a clean plate and let it rest for about 5 minutes. Resting allows the juices to redistribute, helping the chicken remain moist when sliced.
  2. Garnish with fresh basil leaves, a little extra Parmesan, and a squeeze of lemon juice if desired.
  3. Serve warm with your favorite side dishes.
