Instructions

Step 1: Soak the Catfish

  1. Time: 15–20 minutes | Intensity: Low
  2. In a shallow dish, combine buttermilk, hot sauce (if using), salt, and black pepper.
  3. Add catfish fillets, turning to coat. Cover and refrigerate for 15–20 minutes (or up to 1 hour for deeper flavor). Tip: Soaking tenderizes the fish and helps the coating stick.

Step 2: Prepare the Coating

  1. Time: 5 minutes | Intensity: Low
  2. In a separate shallow dish, whisk together cornmeal, flour, Cajun seasoning, garlic powder, onion powder, smoked paprika, cayenne, salt, and black pepper.
  3. Taste a pinch—it should be flavorful and slightly salty. Adjust as needed.

Step 3: Heat the Oil

  1. Time: 8–10 minutes | Intensity: Medium
  2. Pour oil into your skillet or Dutch oven to a depth of 1½–2 inches .
  3. Heat over medium-high heat until it reaches 350°F (175°C) . No thermometer? Drop a small pinch of coating into the oil. If it sizzles and rises to the surface within 2–3 seconds, you’re ready.
  4. Important: Keep the temperature steady. Too hot = burnt crust; too cool = greasy fish.

Step 4: Dredge the Fillets

  1. Time: 3–5 minutes | Intensity: Low
  2. Remove a fillet from the buttermilk, letting excess drip off.
  3. Press it firmly into the cornmeal mixture, coating both sides evenly.
  4. Shake off excess and place on a plate or rack. Repeat with remaining fillets. Tip: For extra crunch, double-dip: back into buttermilk, then back into coating.

Step 5: Fry the Catfish

  1. Time: 15–20 minutes total (3–5 minutes per batch) | Intensity: Medium-High
  2. Carefully lower 2 fillets into the hot oil using tongs. Don’t overcrowd—crowding drops the temperature and steams the fish.
  3. Fry for 3–4 minutes per side , until the crust is deep golden brown and the fish flakes easily with a fork (internal temperature: 145°F / 63°C ).
  4. Adjust heat as needed to maintain 350°F .
  5. Transfer cooked fillets to a wire rack set over a baking sheet. (Avoid paper towels—they trap steam and soften the crust.)
  6. Repeat with remaining fillets, letting the oil return to 350°F between batches.

Step 6: Rest and Serve

  1. Time: 2–3 minutes | Intensity: Low
  2. Let the fish rest for 2–3 minutes.
  3. Serve immediately with lemon wedges, hot sauce, tartar sauce, or remoulade.
  4. Classic sides: hush puppies, coleslaw, fries, or dirty rice.
