Equipment
- Air fryer with a basket diameter of at least 7 to 8 inches
- Large ceramic or glass mixing bowl
- Rolling pin
- Digital kitchen scale (for uniform dough balls)
- Parchment paper cut into small squares (optional, for handling sticky dough)
- Clean cotton kitchen towels (crucial to soften pitas post-bake)
Ingredients
- All-Purpose Flour or Bread Flour: 360 grams (approx. 3 level cups). Bread flour yields a slightly chewier pocket that resists tearing when stuffed; unbleached all-purpose provides a softer, tender bite.
- Warm Water: 240 ml (1 cup), heated to 40°C–43°C (105°F–110°F).
- Active Dry Yeast or Instant Yeast: 7 grams (1 standard packet or 2¼ teaspoons).
- Granulated Sugar or Honey: 5 grams (1 teaspoon) to activate yeast fermentation.
- Extra Virgin Olive Oil: 20 ml (1½ tablespoons), plus an extra teaspoon to grease the bowl.
- Fine Sea Salt: 6 grams (1 teaspoon).

Instructions
Step 1: Bloom the Yeast
- In a measuring cup or small bowl, combine the warm water (40°C–43°C) and sugar. Stir in the yeast. Let the mixture stand untouched for 7 to 10 minutes until a foamy, aromatic head develops across the surface. If the mixture remains flat, your yeast is expired or the water was too hot; discard and restart with fresh yeast.
Step 2: Form the Shaggy Dough
- In your main mixing bowl, whisk together the flour and salt. Create a well in the center of the flour. Pour in the foamed yeast liquid along with 1½ tablespoons of extra virgin olive oil. Using a wooden spoon or a sturdy spatula, stir from the center outward until the flour absorbs the liquid and a rough, shaggy mass forms.
Step 3: Knead for Gluten Structure
- Turn the dough onto a lightly floured surface. Knead vigorously with the heels of your hands for 8 to 10 minutes (or 5 minutes on medium-low speed using a stand mixer fitted with a dough hook). The dough should transform from sticky and uneven into a supple, satin-smooth ball that springs back when pressed with a fingertip. If the dough clings stubbornly to your fingers, dust with 1 additional tablespoon of flour at a time. Avoid adding excessive flour, as higher hydration is essential for steam generation.
Step 4: First Rise (Bulk Fermentation)
- Grease a clean bowl with a teaspoon of olive oil. Place the dough ball inside, turning it once so all sides are lightly coated. Cover the bowl tightly with plastic wrap or a damp kitchen towel. Place it in a draft-free, warm spot (such as an unheated oven with the interior light switched on) for 60 minutes, or until the dough has doubled in volume.
Step 5: Portion and Bench Rest
- Gently punch down the dough to release large pockets of carbon dioxide. Turn it onto a clean work surface. Using a bench knife, divide the dough into 6 equal portions (approximately 100 grams each). Roll each piece under your cupped palm against the counter to create smooth, tight round balls. Arrange the balls on the counter, mist lightly with water or cover with a damp cloth, and let them rest undisturbed for 15 minutes. This bench rest relaxes the gluten network so the dough will roll out easily without snapping back.
Step 6: Roll to Exact Thickness
- Preheat your air fryer to 200°C (400°F) for 5 minutes. While the air fryer heats, roll out the first dough ball on a clean, minimally floured surface. Roll outward from the center, rotating the disc frequently to maintain an even round shape roughly 6 to 7 inches in diameter.
- Target Thickness: Aim for approximately 4 mm to 5 mm (about 3/16 inch). If rolled too thin, the top and bottom crusts weld together without an air chamber; if left too thick, the dough will cook through as a dense flatbread rather than blowing up into a pocket.
Step 7: Air Fry to a Golden Puff
- Gently transfer the rolled disc into the center of the preheated air fryer basket. Work with one pita at a time to allow unrestricted airflow around the flatbread.
- Close the air fryer and cook at 200°C (400°F) for 2 minutes . During this window, resist opening the basket; the concentrated heat traps the steam and blows the dough upward into a dome.
- At the 2-minute mark, open the basket. The pita should be fully ballooned with light patches of pale gold. Flip the pita over using silicone-tipped tongs.
- Cook for an additional 1 minute to 1½ minutes until the underside shows golden blisters and the structure feels crisp yet springy.
Step 8: Steam Soften
- Transfer the hot pita directly from the basket into a clean, dry cotton kitchen towel and fold the fabric over it completely. Repeat the rolling, air frying, and flipping steps with the remaining dough portions. As each hot pita sits inside the towel, its own trapped steam gently softens the crisp outer crust, turning it pliable, tear-resistant, and tender.
