Equipment
- Air Fryer: Any size works, but a 5.8QT or larger basket is ideal to avoid overcrowding.
- Chef’s Knife & Cutting Board: For consistent cuts.
- Pastry Brush: Essential for distributing oil evenly.
- Tongs: For flipping the eggplant.
Ingredients
The Produce
- 2 Medium Eggplants (about 1.5 to 2 lbs total). Variety Note: You can use Globe eggplant (the large purple ones), Italian eggplant, or even the smaller, sweeter Japanese/Chinese eggplants. If using smaller varieties, reduce cooking time by 25%.
- 1 tsp Fresh Thyme (or ½ tsp dried oregano)
The Pantry
- 2 tbsp Extra Virgin Olive Oil (plus extra for brushing)
- 1 tsp Kosher Salt (Diamond Crystal preferred; if using table salt, use half the amount)
- ½ tsp Freshly Cracked Black Pepper
- ¼ tsp Garlic Powder (optional, for depth)
Optional Garnish
- Lemon wedges
- Fresh flat-leaf parsley, chopped
- Flaky sea salt (Maldon)
- Tahini drizzle

Instructions
Step 1: Prepare the Eggplant (Intensity: Low)
- Wash and dry your eggplants. Slice off the stem and the bottom end. There is no need to peel the eggplant—the skin is edible and holds the flesh together.
- Cut the eggplant in half lengthwise. Then, cut each half into 1-inch thick half-moons or cubes. Consistency is key. If your pieces are uneven, the small ones will burn while the large ones remain raw.
- Pro Tip: If you are using large, mature eggplants, you may see many seeds. This is fine. However, if you want to reduce any potential bitterness (which is rare in modern grocery store varieties), you can sprinkle the cut pieces with salt and let them sit in a colander for 15 minutes. Pat them dry before cooking. This step is optional but recommended for the absolute best texture.
Step 2: Seasoning (Intensity: Low)
- Place the eggplant pieces in a large mixing bowl. Drizzle with the olive oil. Use your hands (or a spatula) to toss the eggplant until every piece is glistening. Eggplant acts like a sponge; the oil needs to coat the surface to conduct heat and prevent burning.
- Sprinkle the kosher salt, black pepper, garlic powder, and thyme over the top. Toss again to distribute the seasoning evenly.
Step 3: Preheat the Air Fryer (Intensity: Medium)
- Do not skip this step. Preheating the air fryer is crucial for getting a good sear on the eggplant. Set your air fryer to 380°F (193°C) and let it run for 3 minutes. If your air fryer doesn’t have a preheat function, simply run it empty for 3 minutes.
Step 4: The First Roast (Intensity: High Heat / Low Attention)
- Carefully place the seasoned eggplant into the air fryer basket. Do not overcrowd. The air needs to circulate around each piece to roast them. If you have a small air fryer, cook in two batches.
- Set the temperature to 380°F (193°C) and set the timer for 12 minutes .
- Time and Intensity Check: After 6 minutes, pull the basket out and shake it vigorously. This ensures even cooking. The intensity here is high heat, but the risk of burning is low provided you shook the basket.
Step 5: The Flip and Finish (Intensity: Medium Heat / High Attention)
- After 12 minutes, the eggplant should be softening but not yet fully tender. Use tongs to flip the pieces over. At this stage, you can increase the heat to 400°F (204°C) for the final 6–10 minutes. This higher intensity blasts the exterior, creating a delicious char and crisping the edges.
- Cook for another 6 to 10 minutes . The total cooking time will range from 18 to 22 minutes depending on the water content of your eggplant and the wattage of your air fryer.
- How to know it’s done: The eggplant should be deeply golden brown, slightly collapsed, and completely tender when pierced with a fork. There should be no resistance.
Step 6: Serving (Intensity: None)
- Transfer the roasted eggplant to a serving platter. Immediately squeeze fresh lemon juice over the hot eggplant—the acid will soak in and brighten the flavor. Sprinkle with fresh parsley and flaky sea salt.
