- Wash and thoroughly dry the sweet potatoes. Cut them into uniform 3/4-inch (2 cm) cubes . Uniformity is critical here: smaller cubes roast too fast and burn, while larger pieces stay firm in the center.
Step 2: Dry Thoroughly
- Pat the cut cubes dry with paper towels. Removing excess surface water prevents steaming, allowing the oil and seasonings to adhere directly to the potato surface.
Step 3: Coat and Starch
- Transfer the dry cubes to a large mixing bowl. Drizzle with the oil and toss until evenly glossy. Sprinkle the cornstarch evenly over the cubes and toss thoroughly until no white powdery patches remain.
Step 4: Season
- In a small ramekin, whisk together the smoked paprika, sea salt, garlic powder, onion powder, black pepper, cumin, and cayenne. Sprinkle the seasoning blend over the sweet potatoes and toss vigorously with a spatula or clean hands so every face of every cube is evenly coated.
Step 5: Preheat the Air Fryer
- Preheat your air fryer to 400°F (200°C) for 3 to 5 minutes. Starting with a scorching hot basket ensures immediate sizzle upon contact, preventing sticking and kicking off caramelization instantly.
Step 6: Roast at High Intensity (400°F)
- Spread the seasoned sweet potatoes into the preheated air fryer basket in a single layer.
- Cook’s Rule: Do not overcrowd the basket. If the cubes overlap significantly, air circulation drops and the potatoes steam instead of roast. Cook in two batches if using an air fryer smaller than 5.5 quarts.
- Roast for 15 to 18 minutes total.
- Shake and flip at the 8-minute mark: Vigorously shake the basket (or turn with tongs) halfway through to expose unroasted surfaces to the top heating element.
- Check at 14 minutes: Pierce the largest cube with a fork. It should slide in effortlessly with no chalky resistance. If you prefer extra-dark, deeply caramelized edges, give them the full 17–18 minutes.
