Equipment
- Serrated Bread Knife (long, sharp teeth are essential to slice through the crust without squashing the loaf).
- Heavy-gauge rimmed baking sheet.
- Heavy-duty aluminum foil.
- Cast-iron or non-stick skillet (for charring the corn).
- Small saucepan (for melting and infusing the garlic butter).
- Silicone pastry brush.
- Cutting board.
Ingredients
The Bread & Fillings
- Artisan Bread Loaf: 1 round sourdough boule or sturdy Italian/French artisan loaf (approx. 14 to 16 oz / 400–450 g). Avoid soft sandwich breads; the loaf must have a thick, crunchy crust to hold its structural integrity.
- Sweet Corn Kernels: 1.5 cups (approx. 200 g), fresh corn cut from the cob or frozen sweet corn (thawed and dried thoroughly).
- Low-Moisture Whole Milk Mozzarella: 1.5 cups (6 oz / 170 g), freshly grated (essential for that dramatic cheese pull).
- Sharp White or Yellow Cheddar: 1 cup (4 oz / 115 g), freshly grated (adds sharp, salty contrast to the sweet corn).
- Grated Parmigiano-Reggiano: 1/4 cup (25 g), finely grated.
- Pickled or Fresh Jalapeño (Optional): 1 small pepper, finely minced (for a touch of heat).
The Rich Garlic-Herb Butter Glaze
- Unsalted Butter: 1/2 cup (1 stick / 115 g), high-fat European-style preferred.
- Fresh Garlic: 5 to 6 cloves, very finely minced or grated on a microplane.
- Fresh Flat-Leaf Parsley: 2 tablespoons, finely chopped.
- Fresh Chives: 1 tablespoon, finely minced.
- Fine Sea Salt: 1/2 teaspoon.
- Cracked Black Pepper: 1/4 teaspoon.
- Smoked Paprika or Red Pepper Flakes: 1/4 teaspoon (for color and mild warmth).
Culinary Science & Assembly Mechanics
- Choosing the Right Loaf: Loaves with open, chewy crumbs and dense, sturdy bottom crusts (such as sourdough boules or crusty round batards) are mandatory. Pre-sliced breads or soft white sandwich loaves turn mushy once saturated with warm butter and heavy cheese.
- The Grid-Cut Technique: Slice the bread in a 1-inch checkerboard grid pattern. Cut deeply through the loaf, but stop approximately 1/2 inch before the bottom crust . The bottom crust acts as the structural foundation that holds all the butter, cheese, and corn intact.
- Moisture Removal from Corn: Sweet corn contains high cellular moisture. If stuffed directly into the bread raw or frozen, that moisture leaches into the bread during baking, leaving the bottom soggy. Charring the corn in a hot, dry skillet evaporates excess water, concentrates the natural fructose, and imparts a caramelized, nutty depth.
- Freshly Shredded Cheese vs. Pre-Shredded: Pre-bagged cheese contains potato starch and cellulose to prevent sticking in the bag. These starches inhibit a silky, stretchy melt. Grating whole blocks of whole-milk mozzarella and sharp cheddar ensures an unbroken, glossy cheese pull.

Instructions
Step 1: Char the Sweet Corn
- Heat a dry cast-iron skillet over medium-high heat for 2 minutes.
- Add the 1.5 cups of dried sweet corn kernels in an even layer. Cook undisturbed for 2 to 3 minutes until the kernels blister and show light brown char spots on the bottom.
- Stir and toss the corn, cooking for another 2 minutes until lightly caramelized and fragrant.
- Remove from heat and transfer the corn to a plate to cool slightly.
Step 2: Simmer the Garlic-Herb Butter
- In a small saucepan set over low heat , melt 1/2 cup of unsalted butter.
- Add the minced fresh garlic, sea salt, black pepper, and smoked paprika.
- Cook on low for 3 to 4 minutes , stirring constantly. Let the garlic soften and release its sweet aromatic oils into the butter without browning or turning bitter.
- Remove the saucepan from the heat and stir in the freshly chopped parsley and chives.
Step 3: Cut the Bread Grid
- Place the artisan loaf flat on a stable cutting board.
- Using a long, sharp serrated bread knife, slice across the loaf at 1-inch intervals , stopping roughly 1/2 inch before cutting through the bottom crust.
- Turn the loaf 90 degrees and slice perpendicular to your original cuts at 1-inch intervals, creating a diamond or checkerboard grid of bread stalks that remain connected at the base.
Step 4: Stuff the Loaf
- In a medium bowl, toss together the shredded mozzarella, sharp cheddar, charred sweet corn, and minced jalapeño (if using).
- Gently separate the bread columns with your fingers. Using a small silicone pastry brush or a spoon, drizzle roughly half of the warm garlic butter down into the crevices of the bread.
- Stuff the cheese and corn mixture deeply into every single cut. Use your fingers to press the mixture down toward the bottom crust, then pack the remaining mixture into the top gaps so plenty of cheese crowns the surface.
Step 5: Baste and Wrap
- Preheat your oven to 375°F (190°C) .
- Tear off a large sheet of heavy-duty aluminum foil and place it on your rimmed baking sheet. Set the stuffed loaf directly onto the center of the foil.
- Spoon and brush the remaining garlic-herb butter evenly over the top crust and exposed bread edges. Scatter the finely grated Parmigiano-Reggiano over the crown.
- Bring the sides of the foil up and fold them loosely over the top of the loaf, creating a tented foil parcel that traps steam without touching the sticky cheese on top.
Step 6: The Two-Stage Bake
- The Steaming Phase (Covered – 375°F / 190°C): Slide the baking sheet onto the middle oven rack and bake covered for 18 to 20 minutes . During this phase, the foil traps steam and heat, allowing the cheese to melt into every crevice and the bread interior to absorb the butter without burning the outer crust.
- The Crisp & Blister Phase (Uncovered – 375°F / 190°C): Carefully peel back and open the aluminum foil, folding it downward to expose the loaf completely. Return the bread to the oven for an additional 8 to 10 minutes . The exposed bread tips will toast into a golden-brown crunch, and the mozzarella on top will bubble and develop light brown blisters.
Step 7: Rest and Serve
- Remove the baking sheet from the oven. Let the bread sit undisturbed for 3 minutes before serving. This brief rest lets the bubbling melted cheese stabilize slightly so it clings to the bread cubes rather than sliding off. Transfer to a wooden board or serving platter and serve immediately while warm.
