Step 1: Prep the Basket & Ingredients
- Preheat your air fryer to 400°F (200°C) for 3 to 5 minutes. While the air fryer heats up, thoroughly wash and dry the potatoes. Dice the potatoes, bell peppers, and onion into uniform 3/4-inch pieces to ensure even cooking. Slice the smoked sausage into 1/2-inch round coins.
Step 2: Season the Mix
- In a large mixing bowl, combine the diced potatoes, bell peppers, onions, and sausage slices. Drizzle the olive oil evenly over the mixture. Sprinkle the garlic powder, onion powder, smoked paprika, Italian seasoning, sea salt, and black pepper across the bowl. Toss thoroughly until every piece is evenly coated in oil and spices.
Step 3: First Air Fry Phase (Potatoes & Base)
- Transfer the seasoned sausage and vegetable mixture into the preheated air fryer basket. Spread everything out into a single, even layer. If your air fryer basket is smaller (under 5 quarts), cook in two separate batches to avoid overcrowding and steaming.
- Set the air fryer to 400°F (200°C) and set the total timer for 18 minutes .
Step 4: Shake & Rotate
- At the 9-minute mark (halfway through cooking), pull out the air fryer basket and shake it vigorously to rotate the potatoes and sausages. This ensures all sides develop a crispy, golden-brown crust. Slide the basket back in and continue air frying for the remaining 9 minutes.
Step 5: Test for Doneness & Serve
- Check the potatoes with a fork—they should be fork-tender on the inside and crisp on the outside, while the sausage coins should have caramelized, crispy edges. If you prefer extra crispy potatoes, cook for an additional 2 to 3 minutes at 400°F.
- Garnish with freshly chopped parsley or green onions and serve immediately.
