Ingredients
For the Air Fryer Scallops
- 1 lb (450g) Large Sea Scallops (Dry-packed preferred, fresh or thoroughly thawed)
- 1 tbsp Olive Oil or melted avocado oil
- ½ tsp Garlic Powder
- ½ tsp Smoked Paprika (optional, for subtle warmth and deep color)
- ½ tsp Kosher Salt
- ¼ tsp Freshly Cracked Black Pepper
For the Garlic-Herb Lemon Butter
- 3 tbsp Unsalted Butter , melted
- 2 cloves Garlic , finely minced
- 1 tbsp Fresh Lemon Juice (plus extra lemon wedges for serving)
- 1 tbsp Fresh Parsley , finely chopped
- Pinch of Red Pepper Flakes (optional, for heat)

Instructions
Step 1: Prep and Dry the Scallops
- If your scallops have the small, tough muscle on the side (the “foot”), peel it off with your fingers and discard.
- Place the scallops on a plate lined with double-layered paper towels. Press another paper towel on top and press down firmly to remove all surface moisture .
- Chef’s Tip: Moisture is the enemy of a good sear! Dry scallops ensure a tender texture and golden crust rather than a steamed texture.
Step 2: Season the Scallops
- Drizzle the dried scallops with 1 tablespoon of olive oil and toss gently to coat evenly.
- In a small bowl, combine the garlic powder, smoked paprika, salt, and black pepper.
- Sprinkle the spice mixture over all sides of the scallops right before cooking.
Step 3: Preheat the Air Fryer
- Preheat your air fryer to 400°F (200°C) for 3 to 5 minutes . Preheating ensures the scallops start searing the second they touch the basket.
Step 4: Air Fry to Perfection
- Lightly spray the air fryer basket with high-smoke-point oil (avocado or olive oil spray).
- Arrange the seasoned scallops in a single layer inside the basket, making sure they do not touch or crowd each other. Cook in batches if necessary.
- Air fry at 400°F (200°C) for 3 minutes .
- Open the basket, flip each scallop using tongs, and air fry for an additional 3 to 4 minutes .
- The scallops are done when they are opaque, firm to the touch, and reach an internal temperature of 125°F to 130°F (52°C to 54°C) .
Step 5: Prepare the Garlic-Herb Lemon Butter
- While the scallops cook, whisk together the melted butter, minced garlic, lemon juice, chopped fresh parsley, and a pinch of red pepper flakes in a small heatproof bowl.
Step 6: Serve Immediately
- Transfer the cooked scallops directly to a warmed plate or serving platter.
- Spoon the warm garlic-herb butter generously over top.
- Garnish with additional fresh parsley and serve immediately with fresh lemon wedges.
