- 2 large eggs , beaten
- 2 to 2½ cups rich chicken broth or turkey stock (low-sodium preferred)
- ¼ cup heavy cream or whole milk (optional, for added silkiness)

Step 1: Prepare and Dry the Bread Base
- In a large mixing bowl, combine the crumbled cornbread and cubed white bread.
- If your bread is fresh, spread it across a baking sheet and leave it uncovered overnight, or lightly toast it in the air fryer at 300°F (150°C) for 4–5 minutes until dry to the touch but not deeply browned. This dryness allows the bread to soak up maximum broth without becoming gummy.
Step 2: Sauté the Aromatics
- Place a skillet over medium heat and melt 6 tablespoons of the unsalted butter (reserve the remaining 2 tablespoons for finishing).
- Add the diced yellow onion and celery. Sauté for 6 to 8 minutes until the vegetables soften and the onions become translucent.
- Stir in the minced garlic, sage, thyme, poultry seasoning, black pepper, and salt. Cook for an additional 1 to 2 minutes until intensely fragrant.
- Remove the skillet from heat and let cool for 3 to 5 minutes.
Step 3: Combine and Hydrate
- Add the warm, buttered vegetable mixture directly into the bowl with the dried breadcrumbs. Gently fold together with a silicone spatula.
- In a measuring cup, whisk together the beaten eggs, heavy cream (if using), and 2 cups of the chicken broth.
- Pour the liquid mixture evenly over the bread mixture. Gently fold until completely absorbed.
- Assess the moisture level: the mixture should resemble a wet, thick batter rather than dry breadcrumbs. If it feels too stiff, fold in the remaining ½ cup of broth.
Step 4: Assemble for the Air Fryer
- Grease your 7- or 8-inch air fryer-safe baking dish thoroughly with butter or nonstick cooking spray.
- Transfer the dressing mixture into the prepared dish. Spread it out evenly, taking care not to pack it down too tightly so the interior stays light and fluffy.
- Melt the reserved 2 tablespoons of butter and brush or drizzle it over the surface.
- Cover the dish tightly with a layer of aluminum foil to lock in steam during the initial bake.
Step 5: Air Fry to Perfection
- Initial Steam Bake (325°F / 163°C): Preheat the air fryer to 325°F (163°C). Place the foil-covered dish carefully into the air fryer basket. Cook for 20 minutes .
- Crisping Finish (350°F / 177°C): Carefully remove the foil. Increase the air fryer temperature to 350°F (177°C) and cook uncovered for 10 to 12 minutes , or until the top forms a deep, crackling golden-brown crust and a toothpick inserted into the center comes out moist but clean (registering at least 165°F / 74°C internally).
Step 6: Rest and Serve
- Carefully remove the hot pan from the air fryer basket using heat-resistant tongs or silicone mitts.
- Let the dressing rest uncovered on a wire rack for 10 minutes . This resting period allows the custard matrix to set, ensuring clean scoops that hold their shape on the plate.
- Garnish with a sprinkle of fresh chopped parsley or extra thyme and serve warm alongside roast turkey, chicken, or rich giblet gravy.
