Ingredients

Main Components

  • Chicken Breasts: 2.5 lbs (approx. 3–4 large boneless, skinless breasts)
  • Cream Cheese: 8 oz (1 block), cubed and softened at room temperature

Seasoning Blend

  • Dry Ranch Seasoning Mix: 1 packet (1 oz / 28g)
  • Garlic Powder: 1 tsp

  • Black Pepper: ½ tsp (freshly cracked)

Instructions

Step 1: Prepare the Crockpot Base

  1. Lightly spray the interior of a 6-quart slow cooker insert with non-stick cooking spray or line it with a slow cooker liner for easy cleanup.
  2. Pour ½ cup of chicken broth directly into the bottom of the slow cooker to prevent scorching during the initial heating phase.

Step 2: Season and Arrange the Chicken

  1. Place the 2.5 lbs of boneless, skinless chicken breasts in a single layer at the bottom of the crockpot.
  2. In a small bowl, combine the ranch seasoning packet , garlic powder , onion powder , smoked paprika , black pepper , and kosher salt .
  3. Sprinkle the spice mix evenly over both sides of the chicken breasts.

Step 3: Layer the Dairy Components

  1. Cut the 8 oz block of cream cheese into 8–10 small cubes and distribute them evenly over the top of the seasoned chicken.
  2. Scatter the 2 tbsp of butter pats around the cream cheese pieces.
  3. Note: Do not stir the contents at this stage. Keeping the cream cheese on top allows it to melt gradually without burning against the bottom heat element.

Step 4: Slow Cook to Temperature

  1. Cover the slow cooker with its lid.
  2. Set to cook on LOW for 6 hours or HIGH for 3.5 to 4 hours .
  3. Verify cooked status using an instant-read meat thermometer inserted into the thickest part of the chicken. The temperature must reach 165°F (74°C) .

Step 5: Shred and Emulsify

  1. Transfer the cooked chicken breasts carefully to a clean cutting board using tongs.
  2. Use a whisk to vigorously blend the hot melted cream cheese, butter, and liquid remaining in the crockpot until a smooth, velvety sauce forms.
  3. Shred the chicken using two forks or a hand mixer on low speed into bite-sized shreds.
  4. Return the shredded chicken to the crockpot and fold it into the cream cheese sauce until fully coated.

Step 6: Melt and Serve (Optional Finish)

  1. If adding cheese, sprinkle 1 cup of shredded cheddar cheese over the top of the coated chicken.
  2. Cover with the lid for 5–10 minutes on the WARM setting until the cheddar is completely melted.
  3. Garnish with crumbled bacon and sliced green onions right before serving.
