Instructions
Step 1: Prep and Dry the Fish
- Start by ensuring your tilapia fillets are completely thawed if using frozen fish. Place the fillets on a clean cutting board lined with paper towels. Use additional paper towels to gently press down and remove all excess moisture from both the top and bottom surfaces of the fish.
- Chef’s Tip: Removing excess moisture is the secret weapon for getting a crisp exterior in the air fryer rather than steaming the fish.
Step 2: Mix the Seasoning Blend
- In a small mixing bowl, combine the smoked paprika, garlic powder, onion powder, ground cumin, cayenne pepper, kosher salt, and black pepper. Stir well to ensure all the spices are evenly distributed.
Step 3: Oil and Season the Fillets
- Lightly brush both sides of each tilapia fillet with the extra-virgin olive oil (or spray evenly with cooking spray). Sprinkle the spice mixture generously over both sides of the fillets, gently patting the spices into the fish so they adhere properly. Drizzle a few drops of fresh lemon juice over each seasoned fillet.
Step 4: Pre-heat the Air Fryer
- Preheat your air fryer to 390°F (200°C) for about 3 to 5 minutes. A hot air fryer basket prevents the delicate fish from sticking and helps lock in moisture immediately upon contact.
Step 5: Cook to Flaky Perfection
- Carefully place the seasoned tilapia fillets in a single layer inside the air fryer basket, making sure they do not overlap (cook in two batches if your air fryer is on the smaller side).
- Cook at 390°F (200°C) for 8 to 10 minutes .
- Do not flip the fish halfway through unless your specific air fryer model requires it; tilapia is delicate and can easily break apart. The fish is done when it reaches an internal temperature of 145°F (63°C) and easily flakes apart with a fork, boasting an opaque appearance and a lightly crisped crust.
Step 6: Rest and Garnish
- Remove the fillets from the air fryer using a wide spatula. Let them rest for 2 minutes on a serving platter to allow the juices to settle. Garnish with chopped fresh parsley and serve immediately with fresh lemon wedges.
