Ingredients

For the Beef Filling:

  • ¼ cup beef broth or water

For the Pastry & Assembly:

  • 1 package (2 sheets) puff pastry, thawed according to package instructions
  • 2 cups shredded mozzarella cheese (or a blend of mozzarella and cheddar)
  • 1 large egg (beaten, for egg wash)
  • 1 tablespoon sesame seeds or everything bagel seasoning (optional, for topping)
  • Fresh parsley , chopped (for garnish)

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 400°F (200°C) .
  2. Line a large baking sheet with parchment paper and set it aside.
  3. Ensure your puff pastry sheets are fully thawed but still cold to the touch so the butter inside does not melt prematurely.

Step 2: Cook the Savory Beef Filling

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the diced yellow onion and cook for 3 to 4 minutes until translucent and soft.
  3. Add the minced garlic and cook for another 30 seconds until fragrant, being careful not to burn it.
  4. Add the ground beef to the skillet. Break it apart with a wooden spoon and cook until completely browned and no pink remains (about 6 to 8 minutes). Drain any excess grease if necessary.
  5. Stir in the salt, black pepper, smoked paprika, and Italian seasoning, ensuring the spices coat the beef evenly.
  6. Mix in the tomato paste, beef broth, and Worcestershire sauce. Simmer for 2 to 3 minutes until the liquid reduces and the mixture becomes thick and rich. Remove from heat and allow it to cool slightly so it doesn’t melt the cheese or pastry upon contact.

Step 3: Roll Out the Pastry

  1. Lightly flour a clean work surface. Unroll one sheet of thawed puff pastry. If needed, use a rolling pin to gently smooth out any creases and roll it into a neat rectangle.
  2. Transfer the rolled pastry sheet onto your prepared baking sheet.

Step 4: Layer and Fill

  1. Sprinkle half of the shredded mozzarella cheese down the center of the puff pastry sheet, leaving a 1.5-inch border clean on all sides.
  2. Spoon the slightly cooled seasoned beef mixture evenly directly over the layer of cheese.
  3. Top the beef layer with the remaining shredded mozzarella cheese, which will create a glorious, gooey center when baked.

Step 5: Shape and Seal the Roll

  1. Using a sharp knife or pastry wheel, cut diagonal strips (about 1 inch wide) along the left and right sides of the pastry dough toward the central filling, leaving the filling intact.
  2. Fold the top and bottom flaps of the pastry over the filling first to secure the ends.
  3. Braid or fold the diagonal strips alternately over the top of the beef filling from left to right, overlapping them to create a neat, lattice-like log appearance.
  4. Brush the entire exposed surface of the pastry generously with the beaten egg wash to achieve a shiny, golden-brown finish once baked. Sprinkle with sesame seeds or everything bagel seasoning if desired.

Step 6: Bake to Golden Perfection

  1. Place the baking sheet in the preheated oven and bake at 400°F (200°C) for 25 to 30 minutes , or until the puff pastry has puffed up significantly, turned a deep golden brown, and the cheese is bubbling through the seams.
  2. Remove from the oven and let it rest on the baking sheet for 5 to 10 minutes before slicing. This helps the melted cheese set slightly for cleaner cuts.
